How To make Great Grandmother Rossi's Biscotti
1/2 c Butter
2 c Sugar
6 Eggs
1 tb Anise extract
1 c Ground almonds
1 ts Salt
1 tb (plus 1 tsp) baking powder
4 c (plus 2 Tb) flour
1. Cream butter with sugar; add eggs one at a time
and beat after each addition. Add anise, then nuts and dry ingredients. Spread in horseshoe shape on 2 buttered and floured cookie sheets. 2. Bake at 350F for 15-18 minutes. When set enough to cut, cut in one-inch pieces and lay each on its side. Continue baking at 225F or 250F for about two hours, or until the biscotti are as hard as you like them. These are foolproof and keep for weeks in a jar. Great for dunking in coffee or milk. -----

Ingredients
¾ cup (150 g) granulated sugar (caster sugar)
½ cup (125 mL) vegetable oil
2 large eggs
2 tsp (10 mL) finely grated lemon zest
¾ tsp (4 mL) pure almond extract
¾ cup (120 g) whole raw almonds
½ cup (65 g) dried cranberries
1 ¾ cups (265 g) all-purpose flour (plain flour)
2 tsp (10 mL) baking powder
½ tsp (2 mL) fine salt
½ tsp (2 mL) ground nutmeg
1 egg whisked with 2 Tbsp (30 mL) water, for brushing
Directions
1. Preheat the oven to 325 F (160 C) and line a baking tray with parchment paper.
2. In a large mixing bowl, whisk the sugar, oil, eggs, lemon zest and almond extract together. Stir in the almonds and dried cranberries.
3. Sift the flour, baking powder, salt and nutmeg in a separate bowl, add this to the wet mixture and stir until completely blended. Shape the dough into 2 logs about 12-inches long, place on the baking tray and pat down to flatten (you can flour your hands to prevent sticking). Brush the logs with the egg mixture and bake for about 35 minutes, until a rich golden brown. Cool the logs on the baking tray a little bit, but so they are still warm to the touch.
4. Using a serrated knife, slice the logs into cookies just over ½-inch thick. Place these back on the baking tray, leaving just a little space between them (you may need a second baking tray) and return them to the oven to bake about 20 minutes, until lightly browned. Remove from the baking tray to cool completely.

Ingredients:
3 large eggs, room temperature (2 whole eggs + 1 egg white)
1 c. (200g) granulated sugar
1 tbsp. (15ml) vanilla extract
zest of 1 orange
1/4 c. (80g) honey
2/3 c. (150g) melted, unsalted butter, room temperature
150g dried cranberries
4 c. (500g) all-purpose flour
2 tsp. (8g) baking powder
1/4 tsp. (1.5g) salt
Coating:
1 large egg yolk
2 tbsp. (25g) granulated sugar for coating
.
Procedure:
Add 2 large whole eggs + 1 large egg white in a small bowl.
Save yolk for egg wash.
Add baking powder & salt to flour. Whisk to combine. Set aside.
Add ingredients inside a large bowl.
Use a whisk to mix.
Gradually add in flour, baking powder & salt mixture.
Use a wooden spoon & hand to mix.
Preheat oven to 350F/177C.
Transfer dough onto floured work surface. Shape into a log.
Place on large tray lined with parchment paper.
Continue shaping into a 20x4-inch (51x10cm) log.
Brush with egg yolk + 1 tsp. (5ml) milk.
Sprinkle 2 tbsp. (25g) of granulated sugar on top.
Position tray on 5th oven rack.
Bake for 30 minutes.
Remove from oven & allow to cool for 15 minutes.
Using a sharp knife, cut biscotti 3/4 inch (1.9cm) thick.
Place them on a lined tray.
Bake for another 15 minutes.
Allow biscotti to cool completely.
Store in an airtight container at room temperature.
They will keep for two weeks.
They can be frozen for up to three months.
These delicious crunchy cookies are great with a hot or cold latte, or cappuccino.
