Chickpeas soup: simple, creamy and simple to make!
INGREDIENTS
500g (1 pound) cooked chickpeas;
500g (1 pound) pumpkin;
1 onion
1 medium potato;
1 small carrot;
1 medium tomato;
45ml (3 tbsp) olive oil;
Salt and pepper;
Fresh parsley, chopped.
METHOD
1. Peel all the vegetables and cut them into cubes.
2. Preheat olive oil in a medium pot with a thick bottom. Add olive oil and cook carrots and onions for 10 minutes.
3. Add pumpkin and potatoes, season with salt and pepper, then pour water over just to cover the vegetables. Cook for 30 minutes on medium-low heat.
4. Add chopped tomato and parsley, bring to a boil, and remove from heat.
5. Serve right away, drizzled with olive with 2 slices of ciabatta bread.

This is a very simple and light Italian bean soup that is quick and easy to prepare. This easy bean soup is so tasty that you will definitely want more.
Recipe:
2 carrots
2 small onions
1 large onion
2 garlic cloves
1.5 liters (6 glasses) water
3 black peppercorns
olive oil
1 celery stalk
1 can of chopped tomatoes
2 cans of white beans
100 g spinach
2 teaspoons dried basil
1 teaspoon dried oregano
salt to taste
pepper to taste
100 g spinach

This Authentic Greek recipe for White Kidney bean soup called “Fasolada” is one of the most popular soups in Greece. It’s very easy to make, with very cheap ingredients, delicious, nutritious, and 1 pot feeds a crowd!
I remember my grandma used to cook this soup for hours and it was truly amazing but alas nowadays we constantly try to find ways to cook our food faster so it can fit our busy schedule. And that is exactly what I did with this soup. I found a way to cook it for 30 min and still taste just like my grandma’s Fasolada soup!
Fasolada is pronounced in Greek: Fa - so - la- the - ah

Fasolada recipe Ingredients:
◾ 250g White kidney beans
◾ 1 onion, roughly chopped
◾ 1 handful of celeriac leaves (or celery roughly chopped)
◾ 2 carrots, cut into rounds
◾ 4 fresh ripe tomatoes grated (400g)
◾ ½ tsp Tomato paste, optional
◾ ½ Lemon juice
◾ 4 Tbsp of extra virgin Olive oil (divided) 3 at the start and 1 at the end.
◾ Salt and black pepper to taste
