The BEST I've Ever Had: Julia Child's French Onion Soup
I always wanted to remake Julia Child's masterpiece: French Onion Soup (Soupe a l'oignon). The first time I made it, it was very, very good. But a few years of learning and the addition of homemade beef stock, how much does it improve?! You can find this recipe in Mastering the Art of French Cooking v1.

Recipe:
(for 6)
1 1/2 pounds sliced yellow onions
3 tb butter
1 tb oil
1 tsp salt
1/4 (or a pinch more;)) sugar for the onions to brown
3 tb flour (don't be a cowboy when adding this in)
2 quarts beef stock
1/2 cup dry white wine or vermouth
salt and pepper
3 tb cognac (if you want)
rounds of french bread toasted (olive oil and a garlic clove)
1 to 2 cups of swiss or parmesan cheese... or both
beef stock:
3 to 4 pounds raw beef bones
2 each: roughly sliced carrot, onion, celery
6 or more quarts water
herb bouquet: 8 parsley sprigs, 1/4 tsp thyme, couple bay leaves, 6 peppercorns, 4 allspice berries
2 large garlic cloves smashed
large unpeeled tomato
salt and pepper

FRENCH ONION SOUP ????????????
1. Slice 4 cups of onion and cook over medium heat with 1 tbsp each of butter, olive oil, salt and pepper until the onions are soft and translucent.
2. Once the onions are cooked down, add 1 tbsp grated garlic and 1 tsp dried thyme and cook with onions until they are golden brown and caramelized - about 20-30 minutes.
3. Add 4 cups of beef stock, 1 tbsp Worcestershire sauce, and 1 bay leaf to the pot and cook until the broth comes up to a boil.
4. Add slices of your favorite crusty bread - you can use a French baguette but had sourdough on hand this time - on top of the soup.
5. Add grated cheese - gruyere is traditional but I used Parmesan this time - on top of each slice of bread.
6. Add 1 tbsp balsamic vinegar to the broth - I think this is the secret ingredient - to the pot.
7. Place the pot under the broiler on high for 5 minutes or until the cheese has melted and the bread has become golden brown and toasted.
8. Serve immediately and enjoy!

GREEK YOGURT BANANA PUDDING ????????
1. Whisk 1-2 cups heavy cream to soft peaks and set aside.
2. Add 4 cups Greek yogurt, 1 tbsp honey, 1 tsp vanilla extract, and 1 vanilla pudding mix packet to a large mixing bowl and combine well.
3. Add 2 sliced bananas to mixture and fold gently.
4. In a baking dish, spread pudding mixture across the bottom, covering the surface area to create the first layer.
5. Slice 1 more banana and layer on top of Greek yogurt mixture.
6. Spread whipped cream on top of banana layer.
7. Slice the last banana (4 total) and layer on top of whipped cream.
8. Add crushed graham crackers on top of whipped cream.
9. Place in refrigerator for at least 2 hour before serving.
10. Enjoy!

RECIPE: FRENCH ONION SOUP
2 tbsp. butter (25 ml)
1 Tbsp. olive oil (15 ml)
6 medium-sized onions (about 3 pounds), peeled, sliced
2 garlic cloves, peeled, sliced
1 bay leaf
Freshly chopped thyme
1 tbsp. Dijon mustard (15 ml)
Splash Brandy or Cognac
1 cup dry white wine (250 ml)
8 cups beef stock (2 L)
Sea salt and freshly cracked black pepper
4 baguette slices, toasted
1 cup grated Comte or Gruyere cheese (250 ml)
Melt butter with olive oil in heavy, large pot over medium low heat . Add onions, stir to coat and cover. Steam onions for 20-25 minutes, until soft and tender but with no colour. Remove lid and continue to cook increasing heat to medium/high for another 30-35 minutes, stirring occasionally to prevent scorching and deglaze with white wine and continue. Onions should be a deep brown colour and reduced by 5-6 times. Add garlic, bay leaf and thyme sprig and deglaze with Cognac. Stir just until garlic is translucent.
Stir in Dijon mustard. Add remaining white wine and stock. Simmer uncovered for about 20 minutes to develop flavour. Season to taste with salt and pepper. Remove bay leaf.
Preheat broiler. Ladle soup into ovenproof bowls. Top each with slice of toasted baguette and grated cheese. Broil until cheese melts and bubbles.
