Serves 3-4 persons
This is a beloved Greek recipe for Chickpea soup called Revithosoupa in Greek.
This soup has a small secret. You need to soak the chickpeas 24 h before you make the soup, so it needs some ahead planning.
I am changing the water 2 times in this recipe. This soup is actually terrific and I am sure everyone in your family will love it, I promise you that! So let me show you how to make this beautiful soup which is very similar to another popular dish called Chickpea Stew-Revithada (check my separate recipe)!
Suitable for vegans and fasting.
INGREDIENTS:
Ingredients for soaking the chickpeas:
300 gr / 10.5 oz / 1.5 cups Chickpeas (dried, bought recently)
Water
If needed, 1 tsp. Baking Soda
Ingredients for the Chickpea Soup:
The soaked chickpeas
1 Large dry Onion or 2 Medium ones
2 Garlic Cloves
¼ bunch fresh Thyme i.e. 2 tbsp. fresh thyme leaves only
2 Bay leaves
1 tsp. ground Cumin
Optional: 1 large Carrot cut in rounds
Optional: ½ tsp. Chili Flakes-Boukovo
Juice from 2 lemons +1 Lemon for garnish
125 ml or ½ cup Olive Oil
Salt and Ground Pepper
About 1.5 lt. or 6 cups hot, boiling Water for making the soup

Αυτή είναι η αγαπημένη Ελληνική συνταγή για Ρεβιθόσουπα. Αυτή η σούπα έχει ένα μικρό μυστικό. Πρέπει να μουλιάσετε τα ρεβίθια 24 ώρες πριν φτιάξετε τη σούπα, οπότε χρειάζεται κάποια προετοιμασία από πιο μπροστά. Θα δείτε επίσης ότι αλλάζω το νερό 2 φορές σε αυτή τη συνταγή. Αυτή η σούπα είναι πραγματικά καταπληκτική και είμαι σίγουρη ότι θα αρέσει σε όλη την οικογένειά σας, σας το υπόσχομαι αυτό! ΥΛΙΚΑ:
Υλικά για να μουλιάσετε τα ρεβίθια:
300 γρ / 10,5 oz / 1,5 φλ. Ρεβίθια (ξερά, αγορασμένα πρόσφατα)
Νερό
Αν χρειαστεί, 1 κ.γ. Μαγειρική Σόδα
Υλικά για τη σούπα:
Τα μουλιασμένα ρεβίθια
1 Μεγάλο ξερό Κρεμμύδι ή 2 μεσαία
2 σκελίδες Σκόρδο
¼ μάτσο φρέσκο θυμάρι δηλ. 2 κ.σ. μόνο φύλλα φρέσκου θυμαριού
2 φύλλα Δάφνης
1 κ.γ. Κύμινο
Προαιρετικά: 1 μεγάλο Καρότο κομμένο σε ροδέλες
Προαιρετικά: ½ κ.γ. Μπούκοβο
Χυμός από 2 Λεμόνια + 1 Λεμόνι για διακόσμηση
125 ml ή ½ φλ. Ελαιόλαδο
Αλατοπίπερο
Περίπου 1,5 lt. ή 6 φλιτζάνια καυτό, βρασμένο Νερό για την παρασκευή της σούπας

Homemade delicious chickpea soup greek style. Healthy, quick and easy.
Ingredients: 1/3 pack chickpeas, soaked for 12 hours. 1 onion in slices. Olive oil, salt and pepper. A few drops of lemon to taste. A pinch of dry rosemary. 1 chicken or vegetable stock cube.

Chickpea Soup | Christine Cushing
From Quarantine Kitchen: In these extreme times of social isolation and quarantine, I want to show you how to make the most of a few simple ingredients in your pantry, like dried chickpeas or any bean, simple vegetables and some extra virgin olive oil. This rustic chickpea soup is very cost effective, nutritious, easy to make and most of all delicious. The idea is to use up whatever you have in your pantry and fridge. FULL RECIPE BELOW
RECIPE - CHICKPEA SOUP
1 cup dried chickpeas (250 ml), or other beans
2 tbsp. olive oil (30 ml)
1 carrot, diced
1 small onion, diced
1 rib celery, diced
2 cloves garlic, chopped
5 cups water (1.25 litres)
1 tsp. dried Greek oregano (5 ml)
½ tsp. ground cumin (2 ml)
2 bay leaves
Grated zest of 1 lemon and juice of ½ lemon
Sea salt and freshly cracked black pepper
fresh chopped dill , optional
Squeeze of fresh lemon juice, to finish soup, optional
Splash of olive oil, to finish soup, optional
Soak chickpeas in water for 4 – 6 hours. Drain and rinse with cold water.
Sauté onions , carrots, celery in olive oil on medium heat until golden, about 2 to 3 minutes. Add garlic and cumin and Greek oregano and continue to cook 1 to 2 minutes more or until garlic is golden. Add chickpeas, lemon zest , bay leaves and water. Bring to a boil, cover and reduce heat to low. Simmer for about 40 to 45 minutes or until chickpeas are tender. Season the soup with salt and pepper. Add chopped fresh dill, lemon juice and olive oil. Serve soup hot.
