How To make Golden Roast Turkey
Ingredients

turkey (16 lb)

cup
butter or margarine, melted
1/4
teaspoon
salt
1/4
teaspoon
pepper
Directions:
Remove giblets and neck from turkey; wash, and set aside.
Wash turkey thoroughly inside and out. Pat dry with towels. Remove any excess fat.
Prepare your choice of dressing.
Preheat oven to 325F.
Spoon some of dressing into neck cavity of turkey. Bring skin of neck over back; fasten with poultry pin.
Spoon remaining dressing into body cavity; do not pack. Insert 4 or 5 poultry pins at regular intervals. Lace cavity closed with twine, bootlace fashion and then tie.
Bend wing tips under body, or fasten to body with poultry pins. Tie ends of legs together. Insert meat thermometer in inside of thigh at thickest part.
Place turkey on rack in shallow roasting pan. Brush with some butter; sprinkle with salt and pepper.
Roast uncovered and brushing occasionally with remaining butter and pan drippings; about 4 hours, or until meat thermometer registers 185F. Leg joint should move freely.
When turkey begins to turn golden, cover with a square of butter-soaked cheesecloth or a loose tent of foil, to prevent burning.
While turkey roasts, cook giblets and neck.
Place turkey on heated serving platter. Remove cheesecloth or foil, twine, and poultry pins. Let stand 20 to 30 minutes before carving.
Make gravy.
Serves 14 to 16.
Notes: Approximate baking time is 18 minutes per pound.

With this perfect simple recipe, dry and tasteless turkey is a thing of the past. Cooking without stuffing reduces the cooking time thereby preventing the bird from drying out. Covering with butter, bacon and foil also helps lock in the flavours for a wonderfully rich, moist buttery turkey. It also produces juices that can be used to make a great gravy . The times quoted here are for a 4.5kg turkey. See below for other cooking times.
SERVES: 6 (with some leftovers)
TIME: 3 1/2 hrs + 45 min resting
INGREDIENTS:
4.5kg / 10lb turkey
50g soft butter
salt & pepper
15 rashers streaky bacon
Large turkey foil
Large heavy bottomed roasting tin
1. Preheat oven to 190c / 370f.
2. Remove giblets from a 4.5kg turkey then place in a large roasting tin.
3. Rub the butter all over the skin of the turkey.
4. Season well with ground black pepper.
5. Lay the bacon rashers over the turkey overlapping slightly. Cover both legs and breasts.
6. Wrap loosely in foil creating a tent for the turkey.
7. Cook for 1 hour.
8. Remove from oven, baste with any juices, recover and return to oven for 1 hour.
9. Baste again. Cook for a third hour.
10. Discard the foil, put the bacon to one side, baste well and cook uncovered for final 30 minutes to brown.
11. Using a meat thermometer, check the centre of the thickest part of the leg is at 80c / 180f, or if using a skewer, the juices run clear.
12. When done, place on a warm serving plate and cover with foil.
13. Allow the meat to rest for 45 minutes while you make the gravy, then serve.

• turkey fillet – 2,5 lb | 1200 g
• water – 4 cup | 1L
• salt – 4 tbsp
Marinade:
• mustard – 1 tbsp
• soy sauce – 1 tbsp
• ground sweet paprika – 2 tsp
• ground black pepper – ½ tsp
• red chili flakes – 1 tsp
• coriander seeds – ½ tsp
• herbs de provence – 1 tsp
• vegetable oil – 2 tbsp
• garlic – 3 cloves
✅ You will need:
• deep bowl
• baking sheet
• food foil
• oven
???? Preparation:
1. Melt 4 tbsp of salt in 4 cup | 1L of water stirring constantly. Deep the turkey fillet into it and leave for 2 hours, then rinse in cold water thoroughly to get rid of salt brine.
2. Combine all the ingredients for marinating in a bowl and brush the turkey fillet on all sides, cover and put into a fridge for 24 hours to marinate.
3. Preheat oven to 350°C | 180°C, line a baking sheet with a foil, lay out the turkey and roast for 30 minutes at 350°F | 180°C, switch the heat off and leave the turkey in the oven for an hour more.
4. Take the roast turkey out of the oven and cool. Keep in the fridge.
5. Serve for breakfast, lunch or dinner.
