We love springtime because it inspires us to transition from our casserole and trusty slow cooker meals and move towards some lighter dishes. We’ve got a recipe here that is big on flavor and super delicious. Sun-dried tomatoes are a great way to add an unexpected heartiness to a dish; they’re slightly sweet and chewy, with a great flavor profile that works well with lighter proteins, like chicken. And when everything’s made in one skillet, well, that’s enough to sell me on any dish!

Goat cheese salad recipe - easy to make - avocado - balsamic vinegar - walnuts - delicious dressing
It might sound fancy, but this seedless grapes, goats cheese, avocado, walnuts and rocket salad is quick and easy to prepare.
INGREDIENTS:
1 Avocado
1/2 Red onion
50g Rocket salad
50-60g Seedless grapes
125g Goat cheese
30-40g Walnuts
DRESSING:
3 tbsp balsamic vinegar
2 tbsp honey
3 tbsp olive oil
1/4 tsp sea salt
METHOD:
1. Add 50g of rocket salad to the bowl.
2. Slice 1/2 onion, 1 avocado, 50g of seedless grapes and add all the ingredients to the bowl.
3. Place 30-40g of walnuts in a resealable plastic bag, press out any excess air, seal tightly and then tap with a rolling pin until the nuts are broken into medium or small-sized pieces.
4. Add 125g of goat cheese to the bowl.
5. In a small bowl combine together 3 tbsp of balsamic vinegar, 2 tbsp of honey, 3 tbsp of olive oil and 1/4 tsp sea salt.
6. Toss all the ingredients with the dressing.

Arugula Salad with Goat Cheese and Pears | Salad Recipe
This easy, festive salad is perfect for serving over the holidays. I suggest adding the vinaigrette to each plated serving if you’re not immediately serving the salad. Add the goat cheese, pomegranate seeds, and toasted pistachios after that. You can substitute the pistachios with walnuts.

✨ ARUGULA SALAD with Goat Cheese and Pears ✨
To Make the Balsamic Vinaigrette
INGREDIENTS
1 shallot minced
1/4 cup balsamic vinegar
1 tablespoon Dijon mustard
1/2 teaspoon kosher salt
1/4 teaspoon pepper
1/3 cup extra virgin olive oil
DIRECTIONS
In a small bowl or mason jar, combine the shallot, vinegar, Dijon mustard, salt and pepper. Mix or shake well. Slowly stream in the olive oil and whisk well. If using a mason jar, pour in the olive oil and shake well. Set aside.
Arugula Salad with Goat Cheese and Pears
To Make the Arugula Salad
Ingredients
2 cups arugula
2 cups romaine lettuce, torn
1 ripe pear, cored and cut into cubes
2 ounces fresh goat cheese, crumbled
Fresh pomegranate seeds
1/4 cup pistachio, toasted and chopped
DIRECTIONS
In a large bowl combine the arugula, romaine, pear and lightly toss. Serve the salad on individual plates and lightly dress each serving with the vinaigrette. Top with and top with desired amount of goat cheese, pomegranate seeds and pistachios.

Day 19 Goats Cheese Salad with Aoife's Vinaigrette
DAY 19 MONDAY 27 JANUARY
GOATS CHEESE SALAD WITH AOIFE'S VINAIGRETTE (SERVES 2 ADULTS)
Ingredients:
100g goats cheese/feta cheese
200g baby spinach leaves
1 cucumber, chopped
100g cherry tomatoes, chopped
250g baby potatoes, peeled & chopped in quarters
3 tablespoons of olive oil,
1 ½ tablespoons of balsamic vinegar,
1 teaspoon of wholegrain mustard,
1 teaspoon of honey,
1 clove of garlic, peeled and chopped
Method:
1: Place potatoes into a large pot of water, bring to the boil and simmer over medium heat for 10 - 15 minutes until soft.
2: Place spinach leaves, cherry tomatoes and cucumber in a large mixing bowl and mix together.
3: Cut feta cheese into chunks and add into salad mix.
4: Place oil, balsamic vinegar, wholegrain mustard, honey & garlic into a jar and shake together.
5: When potatoes are cooked add into the spinach mix.
6: Sprinkle salad with vinaigrette and Serve.
