How To make Gingerbread Men Cookies
1/3 c Water
1/2 c Shortening
1/4 c Butter or margarine
4 1/2 c All-purpose flour
2 ts Baking soda
1 pn Salt
1 1/2 ts Ground ginger
1 ts Ground cinnamon
1 1/2 c Molasses

Combine first 3 ingredients in a small saucepan. Cook over medium heat, stirring constantly, until shortening melts. Combine flour, soda, salt, ginger, and cinnamon; add shortening mixture, stirring well. Stir in molasses; chill 8 hours. Divide dough in half; store 1 portion in
refrigerator. Roll dough to 1/4-inch thickness on a lightly floured surface. Cut with a 5-inch gingerbread man cutter, and place on lightly greased cookie sheets. Press currants into dough for eyes, nose, and mouth. Bake at 350 degrees for 10 minutes. Cool cookies 2 minutes on cookie sheets; remove to wire racks, and cool completely. (Cookies will be soft.) Repeat procedure with remaining dozen. -----

GINGERBREAD MEN cookies #recipe
for 6 gingerbread men:
100g softened butter
110g icing sugar
1 egg
1 tbsp. honey
200g all-purpose flour
2 tsp. ground ginger
1 1/2 tsp. ground cardamom
1 1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1/3 tsp. nutmeg
1/2 tsp. soda

for royal icing:
1 egg white
120g icing sugar
1 tbsp. lemon juice
food coloring
????
PROCESS:
1/ Beat softened butter and icing sugar until pale and fluffy. Add egg and honey and mix well until combined.
2/ Mix together all remaining dry ingridients. Add it to the mixing bowl. Mix until the dough starts to come together. Cover it with plastic wrap and refrigerate for 2 hours.
3/ Roll out the chilled dough on a floured surface and cut cookies.
4/ Bake for 6-8 minutes at 395℉ / 200ºC. Let it cool on a wire rack.
5/ For the glaze whisk the egg whites until stiff peaks, add icing sugar and lemon juice and whisk again until smooth.

Items used in this gingerbread recipe:
• 2 3/4 cups all purpose flour
• 1/2 teaspoon baking soda
• 3/4 teaspoon salt
• 1/2 tablespoon ground ginger
• 1/2 tablespoon ground cinnamon
• 3/4 teaspoon cloves
• 1/2 teaspoon nutmeg
• 1/2 cup butter
• 1/2 cup brown sugar
• 1 egg
• 3/4 cup molasses
Gingerbread Dough Procedure:
Mix together flour, baking soda, salt and spices in a medium bowl and set aside. In the bowl of a stand mixer fitted with the paddle attachment, cream together butter and sugar until light and fluffy. Add in the egg and molasses and continue to mix until combined. Add flour mixture and mix on low speed until the dough is mixed together. Separate dough into two discs and wrap each in plastic wrap. Place in fridge for at least one hour. When dough is ready to be used, roll it out to about 1/4 thickness and cut as desired. Cookies can be baked in the oven at 350F for around 14 minutes.
