Restaurant Style Veg Hot & Sour Soup Recipe | वेज हॉट & सॉर सूप | Chef Sanjyot Keer
Full written recipe for Veg Hot & Sour Soup
Prep time: 15 minutes
Cooking time: 10-15 minutes
Serves: 4-5 people
Ingredients:
CABBAGE | पत्ता गोभी ½ NO.
CARROT | गाजर 1 NO. (PEELED)
CAPSICUM | शिमला मिर्च 1 NO.
FRENCH BEANS | फ्रेंच बीन्स 8-10 NOS.
MUSHROOM | मशरूम 2-3 LARGE.
SPRING ONION | हरा प्याज़ A HANDFUL
OIL | तेल 2 TBSP
GINGER | अदरक 1 TBSP (CHOPPED)
GARLIC | लेहसुन 1 TBSP (CHOPPED)
HOT WATER / VEG STOCK | गरम पानी / वेज स्टॉक 800-900 ML
GREEN CHILLI PASTE | हरी मिर्च की पेस्ट OF 2 GREEN CHILLIES
SUGAR | शक्कर A PINCH
DARK SOY SAUCE | डार्क सोया सॉस 2 TSP
VINEGAR | सिरका 2 TBSP
RED CHILLI SAUCE | रेड चिली सॉस 1 TBSP
WHITE PEPPER POWDER | सफेद मिर्च का पाउडर A PINCH
SALT | नमक TO TASTE
CORN FLOUR | कॉर्न फ्लोर 2 TBSP
WATER | पानी AS REQUIRED
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
SPRING ONION GREENS | हरे प्याज़ के पत्ते A HANDFUL (CHOPPED)
Method:
Cut all the veggies in julienne & finely chop the spring onion greens as shown in the video.
To make the soup, set the wok over a high flame, once it gets hot add the oil & let the oil get hot as well.
Further add ginger & garlic, stir & saute over low flame for 30 seconds.
Add the cut mushrooms & cook over high flame for a minute.
Further add all the julienned veggies, stir & toss over high flame for minute.
Add stock/hot water along with green chilli paste, sugar, soy sauce, vinegar, red chilli sauce, white pepper powder & salt, stir well & bring the soup to a boil.
Then to thicken the soup add the corn flour & water in a separate bowl, mix it well to make a slurry then add the slurry into the soup while mixing it continuously, the consistency of this soup is semi thick so don’t add the entire slurry if not required.
Finally add the chopped fresh coriander & spring onion green, stir well.
Taste the soup & adjust the seasoning as per your preference.
Your delicious hot & sour soup is ready.

LENTIL SOUP RECIPE for a Vegetarian and Vegan Diet. Easy Red Lentils Recipe

▶️ RECIPE INGREDIENTS:
1 cup /180g Red lentils
2+1/2 Tablespoon Olive Oil
1 cup / 130g Onion - chopped
2 cups / 250g Carrots - chopped in small cubes - 2 medium size carrots
1 cup / 200g Yukon Gold Potatoes - 1 large or 2 small in size
2 Garlic cloves / 2 teaspoons approx.
3 Tablespoon / 42g Tomato Paste
4 Cups / 900ml Vegetable Broth (Low Sodium)
2+1/2 Cup / 575ml Water
1 Teaspoon Ground Cumin
1/4 Teaspoon Cayenne Pepper (OPTIONAL)
Salt to taste (I have added total 1+3/4 teaspoon of Pink Himalayan salt)
Lemon Juice to taste (I have added 1 teaspoon, I like it a bit sour but you do you)
INGREDIENTS FOR TEMPERING:
1+1/2 Tablespoon Olive Oil
1/2 Teaspoon Minced/Grated Garlic or to taste
1/4 to 1/2 Teaspoon Crushed Dried Chilies
1/2 Teaspoon Paprika (NOT SMOKED)
▶️ METHOD:
Thoroughly wash the red lentils until water runs clear. Then soak in water for 1 hour.
To a heated pot, add olive oil, chopped onion, carrots, 1/4 teaspoon salt and fry on medium heat until it’s lightly browned. Then add the garlic and fry on medium-low to medium heat (depending on the heat of your stove) for about 1 minute or until fragrant.
Add add ground cumin, cayenne, tomato paste and fry on medium heat for 1 to 2 minutes. Add the potatoes, soaked/strained red lentils, salt, vegetable broth, water and mix well. Bring to a boil and the reduce the heat to medium-low and cook for about 30 minutes or until the lentil and potatoes are cooked.
After 30 minutes, uncover to check if the lentils are cooked, if not cooked cover and cook for a bit longer. Turn off the heat and allow it to cool down before blending. Blend into a smooth puree and Add lemon juice and also taste for seasoning. Cover and set aside while we prepare the tempering.
TO PREPARE THE TEMPERING:
To a small pan, add olive oil, minced garlic, crushed dried chilies and then heat it up on low to medium-low heat. TURN OFF THE HEAT AS SOON AS the just begins garlic starts to sizzle (DO NOT DELAY) - this will prevent the garlic from burning.
✅???? NOTE: Be careful not to burn it. BURNT TEMPERING WILL MAKE THE SOUP BITTER.
After turning off the heat add the paprika and mix quickly in the warm oil and add it to the soup.
Mix the tempering in the soup well and RIGHT AWAY COVER THE POT to seal in the flavours and let it rest for 4 to 5 minutes for the flavours to blend.
Serve hot with some toast and a side salad or just by itself. This is a perfect recipe for meal prep so you can make a big batch of it and freeze it in portions to consume later.
▶️ IMPORTANT NOTES:
???? How to know if the lentils are soaked well? You should be able to cut a lentil piece with your nails, effortlessly. If not, then soak longer
???? Cooking time of the lentils depends on the quality of the lentils. Sometimes one batch of red lentils are drier than the others and may need more cooking time. SO ADJUST THE COOKING TIME ACCORDINGLY. It took me 30 minutes on my stove
???? Cut the carrots and potatoes in small cubes so that it can cook fast
???? Adding salt to the onion and carrots will release it's moisture and help it cook faster so please don’t skip it
???? Every stove is different so regulate the heat as required. If at any point you notice the pan is getting over heated, then reduce the heat.
???? Regarding the tempering - Fry on LOW to MEDIUM-LOW heat, just until the garlic starts to sizzle. TURN OFF THE HEAT, AS SOON AS the garlic begins to sizzle (DO NOT DELAY) - this will prevent the garlic from burning. Then quickly mix the paprika in the warm oil and add it to the soup.

I have COVID so I made garlic soup (Also: Demon Slayer Themed Hot Pot for Nezuko)
I finally caught COVID so I decided to make garlic soup, something I always make for myself when I'm feeling sick. This garlic soup recipe can easily be made vegan with vegetable stock. The most important thing is just to use as much garlic as possible. Plus, I made another Demon Slayer recipe--this time a beet red vegetable hot pot stew to celebrate Nezuko!
Ingredients
4qts of a broth of some kind
Cloves from 4 heads of garlic at least. Or like 40 cloves of garlic.
3 sprigs of fresh oregano
1 bundle of parsley
salt if needed
pepper if needed
Directions
Bring the stock and the garlic to a boil then simmer for 45 minutes or more
cut the tops off of the parsley and tie it in a bundle along with the oregano and let it simmer with the garlic in the stock
Mince the leaves of parsley and use as a topping for the soup
Enjoy and feel better.

Lemon Garlic SOUP for soup season!
Creamyyyy Lemon Garlic Soup????
Ingredients (4-6 servings)
1 Tbsp olive oil
4 garlic cloves
1 red onion
0.5 tsp paprika
1 tsp dried rosemary
1 tsp dried thyme
0.5 tsp garlic powder
¼ tsp chili flakes
1.2 L (5 cups) cooked butter beans
1 L (4 cups) vegetable broth
salt & black pepper, to taste
Juice from 1 lemon + zest
Instructions
1. Heat the olive oil in a pot over medium heat, add the onion sauté for about 1 minute, add the garlic and sauté for another minute.
2. Add the spices, butter beans and broth.
3. Use an immersion blender and blend until smooth.
4. Let it simmer for 10 minutes, stirring occasionally.
5. Add lemon juice and zest.
6. Add more salt and pepper to taste. Enjoy!
