Cranberry Pistachio Goat Cheese Bites

Goat cheese, you ask? Absolutely! Go beyond the safety zone of appetizers made solely with cream cheese and offer a tongue-tantalizing finger food made with a good-quality goat cheese. As you’re perusing goat cheese options, keep in mind that the younger, fresher goat cheese varieties will be milder, but no less distinct, in flavor. The longer a goat cheese ages, the more pronounced the tangy flavor and fragrance will be. Don’t worry, if you’re buying top-notch goat cheese, your goat cheese bites will not remind your guests of a barnyard.
In addition to being one of the tastiest appetizers on the table, these goat cheese bites are one of the easiest party nibbles you can put on a serving platter. You simply form softened cheese into balls and roll the balls in minced pistachios and chopped dried cranberries. Stick a bamboo pick in each of the cheese bites and get the party started.
Wine recommendation: Goat cheese and sauvignon blanc are lusciously made for each other. The acidity and bright, citrusy flavor of this white wine pairs impeccably with the creaminess and tart flavor of the goat cheese. For variety, try a Riesling. Riesling rarely meets a cheese it doesn’t like. If red wine is your thing, opt for a Syrah with big berry flavors, which will also go well with the dried cranberries.

CRANBERRY AND PECAN CHEESEBALL RECIPE
Ingredients
1/2 Cup / 50g Pecans
9 oz / 250g Cream Cheese
1/4 Cup / 60g Sour Cream
1 Cup / 85g Cheddar Cheese
1/2 tsp Garlic Powder
1 Cup / 120g Dried Cranberries
2 Tbsp Chives chopped
Instructions
Roughly chop the pecans. We want smaller and larger pieces to create texture. Place onto a baking sheet and toast in a 200C / 400F oven for 5 minutes or until fragrant. Remove from the oven and transfer to a small bowl to cool.
In a medium sized mixing bowl add the cream cheese. Mix with a wooden spoon for a minute or two to soften. Add the sour cream, cheddar cheese and garlic powder. Fold together until combined. Set the bowl to the side.
Add the cranberries to the bowl with the pecans and toss together. Pour half of the mixture into the bowl with the cheese and save the rest for later. Fold together until combined.
Pour the cheeseball mixture out onto a length of plastic wrap or cooking paper. Bring up the sides to tightly wrap the mixture and shape into a ball. Place into the fridge for at least 4 hours or overnight to set.
Remove the cheeseball from the fridge and press into the correct shape. Pour the remaining cranberry and pecan mixture onto a plate and add the chives. Unwrap the cheeseball and roll around on the plate, pressing the coating in.
Serve now or keep in the fridge until you are ready to serve.
Notes
If you are tight on time, toasting the pecans can be skipped.
Walnut or almonds can be used in place of pecans.
The cheeseball can be made in advance and kept in the fridge for up to 2 days.

2- 8 ounce packages cream cheese
20 oz. can crushed pineapple, well drained
1 cup chopped pecans
1/4 teaspoon salt
2 cups extra chopped pecans to roll it in
Combine cream cheese, drained pineapple, pecans, and salt in a medium bowl. Mix well using an electric mixer or by hand.
Form into a log. Roll in extra pecans to coat the outside of the log. Cover and refrigerate. 
Serve with crackers.
