Arrange the fig leaves in a single layer on a 16- to 18-inch diameter round board or platter.
Place the grapes in the center of the board. Arrange the cheeses on the board around the grapes, cut sides facing out.
Nestle the strawberries between two of the cheeses to create a block of color. Nestle the apricots between two of the cheeses, also creating a block of color. FRUIT AND NUT CHEESE LOG | Quick and Easy
HOW TO MAKE A FRUIT AND NUT CHEESE LOG | QUICK AND EASY
What you'll need:
2-8 ounce packages cream cheese (room temperature)
Honey (1 tbsp)
Cinnamon (1/4 tsp)
Pineapple (3/4 cup finely chopped. If using frozen or canned, squeeze out any excess liquid first)
Dried cherries (1/2 cup chopped)
Dried currant berries (1/2 cup. If you can't find these you can substitute more dried cherries or cranberries)
Almonds (3/4 cups slivered, roasted)
Pecans (3/4 cup chopped, roasted)
Fresh Rosemary (4 small sprigs in total...3 are for garnish, 1 sprig finely chopped)
Instructions:
Lay your 2 packages of cream cheese out on your counter to soften.
In the meantime, heat skillet and roast slivered almonds and chopped pecans just until fragrant or slightly brown. Set aside to cool.
Once your cream cheese has come up to room temperature, place in large mixing bowl and blend with an electric or stand mixer until smooth without lumps.
Add honey, cinnamon, half your cooled roasted nut mixture, dried cherries, freshly chopped pineapple...mix until combined. Cover work surface with two large pieces of plastic wrap. Scrape sides of bowl and drop cheese mixture onto plastic wrap. Using a spatular spread out into a log or similar shape. Tightly wrap the cheese log by twisting ends. Roll back and forth with both hands to smooth out the surface. Tuck ends under and freeze your cheese log for 20 minutes.
While your log is chilling, finely chop 1 sprig of rosemary and set aside.
Add 1/2 cup dried currants to the rest of your roasted nut mixture along with your rosemary. Stir and pour mixture onto a large dinner plate.
Remove cheese from freezer, unwrap and drop onto plate with nut mixture. Roll your cheese log back and forth until completely covered. Make sure to cover the ends of your log as well. Keep rolling and covering until nothing more will stick. Transfer to serving dish and garnish with the last 3 sprigs of rosemary.
Cover with plastic wrap and refrigerate until ready to serve. This cheese log will stay good in the fridge for up to a week. I don't advise freezing.
