How To make French Toast Tortillas with Berries
2 large eggs
1/3 cup milk
2 tablespoons granulated sugar
1 1/2 teaspoons rum -- optional
1/4 teaspoon cinnamon
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
4 burrito-size flour tortillas -- cut into quarters
4 teaspoons butter or margarine
confectioners' sugar 2 cups sliced strawberries
2 cups blueberries
maple syrup
1. Beat eggs, milk, granulated sugar, rum, if desired, cinnamon, vanilla extra ct and almond extract in large shallow bowl. Soak tortillas in egg mixture, 10 minutes, until softened.
2. Melt butter in small saucepan. Add 1 teaspoon of the melted butter to a la rge nonstick skillet and heat over medium-high heat. Add tortilla quarters and cook until golden, 2 to 3 minutes, turning once. Transfer to large serving pl atter; cover and keep warm. Repeat process three more times with remaining tor tilla quarters and melted butter.
3. Sprinkle tortillas with confectioners' sugar and serve with strawberries an d blueberries. Serve with maple syrup. Makes 4 servings.

STUFFED FRENCH TOAST | Weekend Breakfast Or Brunch ❤
We all have one of those weekends when we want to prepare a delicious breakfast for the ones we love, and to make it easier, it can be brunch. It doesn't have to be a weekend, it can be any day of the week too. I make Stuffed French Toast whenever my Ron asks for it because we both love it, and because it's easy. I prepare this for my grandchildren whenever they come over on weekends and it is always a hit with them, I love to top it with strawberries and blueberries, but you can use your favorite fruit too. This Stuffed French Toast can be served with crispy bacon, breakfast ham or breakfast sausage for the perfect compliment. I hope you give it a try. ❤
This recipe will make about 5 or 6
INGREDIENTS FOR FILLING----------------
French loaf bread (slices as needed)
Fresh Strawberries (as needed)
Fresh blueberries (as needed)
4 oz Cream Cheese (soft)
2 Tbsp powdered sugar
2 Tbsp Strawberry preserves
1 tsp vanilla
1/4 tsp ground cinnamon
1/4 C. chopped pecans or walnuts
EGG MIXTURE INGREDIENTS---------
2 EGGS
1/4 TSP GROUND NUTMEG
1/2 C. HEAVY WHIPPING CREAM
INGREDIENTS FOR GLAZE-------------
1/3 C. Orange juice
2 Tbsp Strawberry preserves
1 tsp vanilla
Vegetable oil for griddle (very little)
