Incredibly Tasty!!! 1800's Grasmere Gingerbread Recipe - Glen And Friends Cooking
Incredibly Tasty!!! ???? 1800's Grasmere Gingerbread Recipe
This recipe was invented around 1854 in the village of Grasmere England by Sarah Nelson. You can still buy gingerbread made to this gingerbread recipe; at the same place by the same family for over 165 years. Now the recipe I'm making... may not be the original; but it tastes fantastic none-the-less. Interestingly... after the tasting, Julie kept saying I've had this before, and sure enough she found deep in a box of mementos from a trip to England with her Mom, a wrapper from Sarah Nelson's Grasmere Gingerbread shop. Julie had been there and thought they were so good she kept the wrapper!
Ingredients
225g (350 mL) all purpose flour
2 mL (½ tsp) baking soda
2 mL (½ tsp) cream of tartar
10 mL (2 tsp) ground ginger
175g (6oz) butter, cold cut up
175 g (200 mL) brown sugar
15 mL (1 Tbsp) golden syrup / corn syrup
Sugar for sprinkling
Method
Pre-heat oven to 170ºC (325ºF).
Butter a 20 cm (8 inch) sandwich (cake) tin.
Place the flour, bicarbonate of soda, cream of tartar, ground ginger and butter in a food processor.
Pulse until it resembles fine crumbs.
Transfer to a bowl and mix in the brown sugar.
Add the golden syrup and stir into the mixture with a knife.
Press the mixture in the tin, and bake for 45 to 50 minutes until golden brown.
Remove from the oven and sprinkle with granulated sugar.
Leave to cool in the tin for 15 - 20 minutes, then cut into wedges.

GINGERBREAD HOUSE RECIPE
Ingredients
1 Stick | ½ Cup | 113g Butter
¾ Cup | 250g Golden Syrup, Molasses or Corn Syrup
4 tsp Ground Ginger
4 tsp Cinnamon
1¼ Cups | 250g Brown Sugar
6½ Cups | 810g Flour
1¼ Cups | 310ml Milk
2 Egg Whites
4 Cups | 500g Icing Sugar or Powdered Sugar
Instructions
In a small saucepan add the butter, molasses (or golden syrup or corn syrup), ground ginger, cinnamon, and brown sugar. Heat over medium-low heat, stirring until the butter has melted.
In a large mixing bowl measure out the flour. Pour the melted butter mixture into the bowl as well as the milk.
Using a wooden spoon or electric mixer mix until you have a combined dough. Cover the bowl and place into the fridge for 3-4 hours or overnight to firm up.
Roll out the gingerbread dough between 2 sheets of nonstick paper until it is 1cm or ½ inch thick. Using the templates cut out the gingerbread house pieces.
Bake the house pieces in a 180C|350F oven for 15-20 minutes or until browned. Leave to cool completely before trying to assemble.
To make the royal icing add the egg whites and icing sugar or powdered sugar to a medium sized bowl. Using a stand mixer or a hand mixer, mix the ingredients together for 5-8 minutes until it is thick and bright white. Cover well to prevent drying out.
Decorate the gingerbread house pieces using a piping bag filled with the royal icing. Leave the pieces to dry for at least 6 hours or overnight before trying to assemble the house.
To assemble the house use a cake board or chopping board. Pipe the edges of the front, back and sides with the royal icing. Stick the pieces together, using a glass or mug for support. Leave the bottom of the house to dry for at least 4 hours before adding the roof.
Pipe the edges of the roof pieces with the icing and place on the top of the house, using glasses or mugs for support until it has dried. Pipe the bottom of the chimney pieces and stick them to the top of the house, followed by the side pieces. Pipe the bottom and side of the door to stick down, leaving it as opened or closed as you want. Leave the house to completely dry overnight.
Decorate the outside of the house using gingerbread men or trees or cinnamon sticks to look like wood. For a snow appearance use any leftover royal icing and spread it over the base outside the house. Once dry dust the whole house with icing sugar or powdered sugar.

Ingredients
1/2 cup (115 g) unsalted butter, at room temperature
1 cup (200 g) packed light brown sugar
1 large egg, at room temperature
1/2 cup (130 g) fancy molasses
2 1/2 cups (375 g) all-purpose flour
2 tsp (6 g) ground ginger
1 1/2 tsp (4 g) ground cinnamon
1/2 tsp (2 g) baking soda
1/4 tsp (1 g) fine sea salt
1/4 tsp (1 g) ground cloves
1/4 tsp (1 g) ground nutmeg
1/2 cup (100 g) granulated sugar
Icing sugar, for rolling
Directions
1. Preheat the oven to 325°F (160°C) and line 2 baking trays with parchment paper.
2. Cream the butter and brown sugar in a large mixing bowl by hand for 1 minute, until lighter in colour and smooth. Beat in the egg, then the molasses.
3. In a separate bowl, sift the flour, ginger, cinnamon, baking soda, salt, cloves and nutmeg together. Add all at once to the butter mixture, stir until evenly blended, then stir in the granulated sugar just until combined.
4. Use a small ice cream scoop or 2 teaspoons to shape the batter into balls. Roll the balls in the icing sugar to generously coat and place them on the baking trays, 2 inches (5 cm) apart. Press down on the cookies with the palm of your hand to flatten slightly.
5. Bake for 10 to 12 minutes, until they have puffed up and appear set at the edges. Carefully smack the tray down on the counter to deflate the cookies (for the crackle effect). Let cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
