How To make Deep Fried Shrimp Balls with Celery Sauce
1 lb Shrimp
2 Slices, thin ginger, fresh
1 cl Garlic
1 Stalk, good-sized celery,
Very crisp and fresh 1 ts Light soy sauce
1 tb Oyster sauce
1 tb Vodka
3 tb Chicken broth
1 tb Cornstarch
1 ts Salt
1 tb Cornstarch
2 c Oil, for deep-frying
Lettuce leaves Devein the shrimp. Chop the shrimp very finely, almost into a paste. Mince the ginger and garlic; keep them separate. Peel the tough strings from the celery stock; slice it at angle into pieces about 1/4-inch thick. In a small bowl, combine the soy sauce, oyster sauce, vodka, chicken broth, and 1 tablespoon of the cornstarch. Reserve this mixture. In another mixing bowl, combine the shrimp with half of the minced ginger and half of the minced garlic; add the salt and the remaining tablespoon of cornstarch. Mix well, and with lightly moistened hands form this mixture into balls about 1-inch in diameter. Heat the oil to 350 degree F and deep-fry the shrimp balls 6 at a time. Drain the balls on paper towels and them keep warm. Put 1 tablespoon of the hot oil from the deep-fry pan in a wok and stir-fry the remaining ginger and garlic until it turns golden; add the celery and stir-fry quickly for about for about a half a minute. Add the reserved sauce mixture and stir until it thickens. On a plate, make a bed of lettuce leaves and arrange the shrimp balls on it, pour the sauce over the shrimp balls and serve hot. CRISPY SHRIMP BALLS RECIPE | DEEP FRIED SHRIMP BALL RECIPE
Deep fried shrimp balls is a delicious appetizer made from a seasoned shrimp paste mixture that’s formed into balls. They feature crispy on the outside but chewy and juicy on the inside.
Ingredients
250 grams shrimp, peeled and deveined
1 teaspoon Shaoxing cookingwine
1 teaspoon oyster sauce
1 tablespoon tapioca starch
1 tablespoon all purpose flour
1 egg white
1 teaspoon fish sauce or salt
1/2 teaspoon garlic powder
1/2 teaspoon sugar
1/2 teaspoon baking soda
1/4 teaspoon white pepper
4 pieces of crab sticks (optional)
2 cups of oil for frying
Directions
1. Combine all the ingredients except for oil.
2. Using food processor blend the shrimp to a smooth paste.
3. Form the shrimp mixture into 14 balls.
4. Heat the oil over medium heat. Using a wire spoon or ladle, fry the shrimp balls into the hot oil.
5. Fry the shrimp balls in batches for about 2 minutes on each side or until they become a fluffy golden brown. Drain on a paper lined tray.
Serve hot with sweet chili sauce for dipping.

fresh prawns (grey pawns) – 500~600g
garlic – 2 cloves
coriander roots – 2
red chili – 1
salt – ½ tsp
sugar – ½ tsp
fish sauce – ½ tsp
ground white pepper – ½ tsp
panko bread crumbs
THAI SPICY SEAFOOD DIPPING SAUCE
coriander chopped – 2 tbs
fresh red chilies – 5
fresh green chilies – 5
garlic – 5 cloves
lime juice – ½ cup
oyster sauce – 1 tbs
fish sauce – 2 tbs
salt – ½ tsp
sugar or palm sugar – 3 tbs

???? 【METHOD】????
1. Peel, devein and clean the shrimps.
2. Pat the shrimp dry (the dryer the better)
3. Mix all ingredients (shrimps, garlic, red chili, salt, sugar, fish sauce, ground white pepper) in a bowl a mix well.
4. Blend all ingredients in a food processor at low speed for 1-2 minutes
5. Shape the mixture into a ball (25g~30g) and coat with bread crumb (panko)
6. Deep fry in oil at 170ºC ~ 180ºC for 2-3 minutes or until golden brown.
7. Make the sauce by combining all ingredient together and mix in a blender.
8. Dip and enjoy!

Let’s make one of my favorite dim sum items
INGREDIENTS
-1 12-ounce package of wonton wrappers
-2 pounds raw shrimp, peeled and deveined
-¼ cup chopped green onions, plus more for garnish
-1 Tbsp soy sauce
-1 Tbsp fish sauce
-1 tsp kosher salt
-1 tsp freshly ground black pepper
-1 tsp sugar
-1 large egg
-2 Tbsp rice flour
-4 cups vegetable oil
-Sweet chili sauce, for dipping
Preparation
1. Finely chop the shrimp, then add to a large bowl with the green onions, soy sauce, fish sauce, salt, pepper, and sugar. Mix well. Add the egg and rice flour and stir; the mixture should thicken a bit.
2. Use a sharp knife to shred the wonton wrappers into ½-inch-wide strips, then transfer to a separate large bowl.
3. Scoop 2 tablespoons of the shrimp filling into the bowl with the shredded wrappers and pat firmly to cover the filling completely. Repeat to make about 6 balls total.
4. In a large pot, heat the vegetable oil over medium-high heat until the temperature reaches 350°F (180°C).
5. Working in batches, fry the shrimp balls in the hot oil for 5-6 minutes, or until the internal temperature reaches 145°F (63°C).
6. Serve immediately with sweet chili sauce alongside for dipping.
7. Enjoy!
