• 2 pounds red potatoes, diced
• 1 pound bacon, cooked and crumbled (optional)
• 1/2 red onion, diced
• 4 ribs celery, diced
• 4 hard boiled eggs, roughly chopped
• 3/4 cup mayonnaise
• 1/4 cup cider vinegar
• 1/4 cup minced fresh dill
• 2 tablespoons sugar
• 1 tablespoon dijon mustard
• 1 teaspoon salt
• 1/2 teaspoon pepper

1️⃣ 00:00:30 - Bring a large pot of water to a boil over high heat. Add in diced potatoes and cook until tender, 10 to 15 minutes. Drain well and rinse with cold water to cool.
2️⃣ 00:01:34 - In a large mixing bowl, add in cooled potatoes with bacon (optional), onion, celery, and eggs.
3️⃣ 00:01:02 - In a small mixing bowl, whisk together mayonnaise, cider vinegar, dill, sugar, mustard, salt, and pepper.

* Potatoes - 1,5 lbs | 700g
* Eggs - 5
* Onion - 1,5 oz | 50g
* Celery - 1 stalk
* Pickled cucumbers - 1,5 oz | 50g
* Scallions - 0,5 oz | 10g
* Mayonnaise - 5 tbsp
* Dijon mustard - 2 tsp
* Apple cider vinegar - 1 tbsp
* Dried paprika - ½ tsp
* Salt - to taste
* Ground black pepper - to taste
✔︎ You will need:
* Cutting board
* Saucepan
* Salad bowl
???? Preparation:
1. Add eggs in a saucepan, pour in cold water, and bring to a boil, turn off the heat, cover the saucepan, and let them leave for 15 minutes. Then, cool the eggs in ice water and peel them.
2. Cut the potatoes into 1 cm cubes, rinse in cold water, place in a saucepan, cover with water, bring to a boil over medium heat, reduce the heat to low, and cook for 7-10 minutes. Towards the end of cooking, season with salt to taste and check for doneness with a fork. Drain on a colander after cooking.
3. In a salad bowl, combine the boiled potatoes, diced hard boiled eggs, finely chopped onions, celery, pickled cucumbers, and scallions.
4. In a separate bowl, mix mayonnaise, dijon mustard, apple cider vinegar, paprika, black pepper, salt. Add potato salad dressing to the salad bowl with the vegetables and mix well.
5. Serve as a salad or side dish with meat or fish, garnished with finely chopped scallions, dill or parsley.

1. You can boil the potatoes with skins on if you like the added texture.

Small yellow, white, or red potatoes are best for potato salad. The potatoes maintain their natural moisture and sweetness this way. If you’re in a pinch, you can chop the potatoes, remember they will take less time to cook. Adding fresh herbs are a nice touch – we like to use a combination of chopped parsley and dill. Parsley, dill, chives, tarragon, and cilantro all work well. Add about two tablespoons of herbs at first then add more to taste. Dill and tarragon are strong, so you may not need the whole 1/4 cup. If you can, try place the potato salad in the refrigerator for 30 minutes or so before serving. This extra time helps the flavors mingle and makes for a better potato salad.
