How To make Cranberry Chews
Grant; hwwk11b 2 1/3 c Flour
1 c Brown sugar; packed
1 ts Cinnamon
1/2 ts Nutmeg
1/4 ts Cloves
1/2 ts Salt
1 c Butter, cold; in 16 pieces
1 1/2 c Rolled oats
16 oz Cranberry sauce-whole berrie
1/2 c Orange marmalade; thick
1 ts Vanilla extract
1 c Walnuts; chopped
DESCRIPTION: Chewy Cranberry Oat Bars with an oat-nut topping. Preheat oven to 350. Grease a 10x15 jellyroll pan (9x13 okay). In a large bowl, combine 2 c flour, brown sugar, cinnamon, nutmeg, cloves and salt. Cut in butter until resembles coarse meal. Stir in oats. Reserve 1 1/2 c of mixture. Firmly press remainder in bottom of prepared pan. Bake 15 minutes. Cool 10 minutes before filling. In medium bowl, stir together cranberry sauce, marmalade and vanilla. Slowly add remaining 1/3 C flour, blending thoroughly. Spread evenly over baked and cooled crust. Add nuts to reserved oat mixture, sprinkle over top of cranberry filling. Bake 30 minutes or until lightly browned. Cool in pan on rack. Cut into 64 bars. Store in airtight container one week, freeze for longer storage. From "The Joy of Cookies." INGREDIENTS
1/2 cup butter, softened
1/2 cup vegetable shortening
1 1/2 cups granulated sugar
4 large eggs
1 Tbs lemon juice
3 cups sifted all-purpose flour
2 tsp baking powder
1/4 tsp salt
1/2 cup fresh cranberries, chopped
1 cup sweetened coconut flakes
Sift together flour, baking soda, and salt. Add chopped cranberries and coconut then toss together until we’ll combined. Set aside.
Beat together butter and shortening then cream together with sugar. Add eggs, one at a time, ensuring each one is incorporated before adding the next one. Once the eggs, sugar, and shortening/butter are combined, add the lemon juice.
Gradually add the dry ingredients to the wet ingredients, until all the flour is absorbed.
Scoop heaping tablespoons of dough onto a prepared cookie sheet a d bake for about 7 minutes. Watch carefully to ensure bottoms do not burn. Tops will remain pale.

Chewy Coconut Cookies Recipe
Chewy coconut cookies are super soft and are packed with shredded coconut. These chewy coconut cookies are very easy to make, and you can always add chocolate chips, nuts, or even extra shredded coconut. If you are a fan of coconut like I am, definitely gives these chewy coconut cookies a try!
Ingredients
1 1/4 cups all-purpose flour
1/8 tsp salt
1/2 cup unsalted butter
1/2 tsp baking soda
1/2 cup light brown sugar
1/2 cup granulated sugar
1 egg
1/2 tsp vanilla extract
1 1/2 cups shredded coconut
Directions
1. In a large bowl, add all-purpose flour, baking soda, and salt. Whisk these ingredients together and then set this bowl aside.
2. Using a hand or stand mixer, cream the butter until smooth. Add in the light brown sugar and granulated sugar and continue mixing. Add in the egg and vanilla extract and continue mixing until the batter is light and fluffy.
3. Start adding a small portion of the all-purpose flour mixture to the butter mixture and continue mixing until the ingredients are combined. Add the remainder of the flour mixture and mix until combined. Add the shredded coconut and pulse the stand mixer for a few seconds or fold the coconut in using a spatula.
4. Roll or scoop the dough into balls and evenly spread out on a cookie tray lined with parchment paper. Bake in a 350°F preheated oven and bake for around 8-10 minutes until the edges start to turn a light brown.
