Mini Pecan Pie Bites Recipe
Buttery, flaky, gooey with pecans. Like a Pecan Pie but bite-sized. If you can't wait for the holidays to dig into this classic pie, the next best thing, is a mini bite-sized version of the classic pecan pie. So good and easy to make with this step by step tutorial. Pecan Bites Recipe
2 Pillsbury Ready to Bake Pie Crusts
⅓ cup/45 grams chopped pecans
⅓ cup/45 grams whole pecans
3 tbsp unsalted butter
¼ cup/30 grams brown sugar
¼ cup/30 grams corn syrup
1 medium egg
1 tsp vanilla extract
Directions and timestamps:
(0:15) In a medium sized bowl, with a whisk mix together the brown sugar and melted butter
(0:23) Add corn syrup, 1 whisked egg and mix well to combine
(0:31) Add vanilla extract and dash of salt and mix well to combine, set aside
(0:36) Prepare pie crust, in this recipe I am using store bought, you can use your own
(0:40) Flour work surface and preheat oven to 400F/200C
(0:50) Using a 3” pastry or cookie cutter, cut 12 rounds (using a 12 count baking tin)
(1:00) Grease 12 count muffin tin and place rounds in each hole, pressing down with a 4 oz mason jar or small spice container, press firmly but not too hard so they do not crack
(1:12) Place 1 tbsp chopped pecans into each round, top with 1 tbsp mixture and 1 whole pecan
(1:23) Bake for 25 minutes and let cool completely to set
(1:29) Using a butter knife or an offset spatula, gently soften the edges of the round by pressing against them to remove and place onto a wire rack

How to make candied ginger with honey - how to make candied ginger at home.
In this video I want to show you hoe to candy ginger with honey instead of sugar. We are going to simmer fresh ginger in honey and water for about 1 hour. This is a very easy recipe that will render you delicious and healthy candied ginger.
Make sure to keep the fantastic ginger syrup that you will have left over. Keep it in the fridge and use it to sweeten tea, coffee, lemonade, over pancakes, over oatmeal and even over ice cream. It is truly delicious.
Ginger and honey are great for your immune system. They are also very good for helping with colds and coughs. I love it as a snack -- 1 a day to keep the doctor away!

1 pound (500 grams) ginger root
1 1/2 cups (350 ml) water
1 1/2 cups (510 grams) honey
You can leave the skin on the ginger if you would like but you will need to scrub the root well to take off all the dirt.
If you are going to peel it, the easiest way is using a spoon. Simply scrape off the peel. Cut off any little pieces that you cannot reach.
Slice the ginger into thin slices. This is better is the slices are not thick.
Place the slices in a pan and add the water and honey.
Place the pot on a burner and start stirring on medium heat, until the honey dissolves. Reduce the heat, cover the pan, and simmer for 30 minutes.
Remove the lid and continue simmering for another 30 minutes.
Take one slice out of the open and pierce it with a fork. If the fork goes through easily the ginger is done. If it is still hard, you will have to simmer longer — until you can pierce it.
Strain the ginger into a pitcher, shaking until all of the excess liquid is removed. Store the ginger syrup in a jar, in the fridge, for other uses.
Slowly place the ginger slices on a cooling rack over a baking sheet — you can also place them directly onto a parchment or wax paper lined baking sheet. Leave the candied ginger on the rack for a minimum of 12 hours.
Store in a closed container in the fridge and enjoy.

BASE KETO CANDY RECIPE
Makes 30 (1 square cm candies)
2 tablespoons unsalted butter
1/4 cup sugar free vanilla syrup
5 teaspoons sugar-free sweetener
pinch of salt
For Salt Water Taffy: add an additional pinch of salt
For Banana Laffy Taffy, add yellow food coloring and 1/2 teaspoon banana extract
For Keto Caramel, use sugar-free caramel syrup, add 2 tablespoons heavy cream.
For Keto Hi-Chews, omit the pinch of salt and add 1/2 teaspoon of LMNT watermelon electrolytes
For Jolly Ranchers, add food coloring, 1/2 teaspoon flavoring and 1/4 teaspoon citric acid
1️⃣ Melt butter in a small saucepan over medium heat. If making caramels, cook the butter until brown bits start to form and the butter have a nutty aroma. This is called browned butter and it creates a delicious caramel flavor.
2️⃣ Reduce heat to low-medium. Add sugar-free syrup, sweetener, salt and food coloring (if using). If making caramels, add in the heavy cream. Stir to combine. Let cook until the mixture starts to boil.
3️⃣ To Make Soft Chews or Taffy: Continue cooking over low-medium heat until the mixture starts to foam and turn frothy. Remove from heat, stir in flavoring and pour into a candy mold. Refrigerate for 1-2 hours to set.
4️⃣ To Make Medium Chews or Caramels: After the initial boil, continue cooking until candy mixture starts to foam and turn frothy. Cook for an additional 1-2 minutes or until the mixture has thickened and you can scrape a spoon on the bottom of the sauce pan and see the pan. Remove from the heat and quickly pour into molds. Refrigerate for 1-2 hours to set.
5️⃣ To make Hard Chews or Hi-Chews: After the initial boil stage, continue cooking until candy mixture starts to foam and froth. Cook for an additional 3 minutes or until the mixture is thick enough to pull off in a ribbon if you lift it up with spoon. Remove from heat and quickly pour into molds. Refrigerate for 1-2 hours to set.
6️⃣ To make Hard Candy or Jolly Ranchers: After the initial boil stage, continue cooking past the foam and frothing stage. Cook until larger clear bubbles start to form. Stir in flavoring and citric acid (if using). Remove from heat and quickly pour into silicone molds. Refrigerate for 1-2 hours to set.
