SNICKERS Pecan Gingerbread Bars
Spiced just right, these ooey-gooey holiday bars are quick and easy to prepare.
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
Makes: 8 servings
Ingredients:
1 cup all-purpose flour
1/2 tsp ground ginger
1/4 tsp ground cinnamon
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
Pinch each ground cloves and allspice
1/3 cup unsalted butter
1/3 cup packed brown sugar
2 tbsp molasses
6 Snickers Minis Chocolate, coarsely chopped
2 tbsp chopped toasted pecans
Instructions:
Preheat oven to 350˚F. Line 8- x 4-inch loaf pan with enough parchment paper to overhang edges; set aside. Stir together flour, ginger, cinnamon, baking powder, baking soda, salt, cloves and allspice; set aside.
Using electric mixer, beat together butter and brown sugar until light and fluffy; beat in molasses. Mix in flour mixture, then press into prepared pan.
Bake for 12 to 15 minutes or until top starts to set around edges. Sprinkle with Snickers Minis Chocolate and pecans. Bake for about 10 minutes or until cookie is golden around edges and Snickers Minis Chocolate starts to melt. Let cool completely on rack; cut into 8 bars.
Tip: Drizzle with white icing if desired.

Chocolate Pecan Scones

Yield: makes 14 to 16 large scones
Ingredients
3 tablespoons plus 4 cups all-purpose flour, divided
1 1/2 cups medium-diced bittersweet chocolate, such as Lindt (8 ounces)
1 cup chopped pecans
2 tablespoons sugar, plus additional for sprinkling
2 tablespoons baking powder
4 teaspoons kosher salt
3/4 pound cold unsalted butter, 1/2-inch diced
1 cup cold heavy cream
4 extra-large eggs, lightly beaten
1 egg beaten with 2 tablespoons water or cream, for egg wash
Directions
Preheat the oven to 400 degrees. Arrange two racks evenly spaced in the oven. Line two sheet pans with parchment paper.
In a small bowl, combine the 3 tablespoons flour with the chocolate and pecans and set aside.
In the bowl of an electric mixer fitted with the paddle attachment, combine the 4 cups flour, the sugar, baking powder, and salt. Add the butter and, with the mixer on low speed, blend until the butter is the size of peas. Measure the cream in a 2-cup glass measuring cup, add the eggs, and beat until combined. With the mixer still on low, pour the wet mixture into the dry mixture and combine just until blended. Add the chocolate and pecan mixture and mix just until combined. The dough will be very sticky.
Dump the dough out onto a very well-floured surface and knead it a few times to be sure the chocolate and pecans are well distributed, adding a little flour so the dough doesn't stick to the board. Flour your hands and a rolling pin and roll the dough 3/4 to 1 inch thick. You should see lumps of butter in the dough. Cut the dough with a 3-inch plain round cutter and place the scones on the prepared sheet pans. Reroll the scraps and cut out more scones. Brush the tops with the egg wash, sprinkle with sugar, and bake for 20 minutes, switching the pans halfway through, until the tops are lightly browned and the insides are fully baked. Serve warm or at room temperature.
Cook’s Note
Pro tip: Cold bits of butter in the dough ensure flaky scones. When the heat hits the bits of butter, the water in the butter turns to steam and makes the dough rise.

How to make candied ginger with honey - how to make candied ginger at home.
In this video I want to show you hoe to candy ginger with honey instead of sugar. We are going to simmer fresh ginger in honey and water for about 1 hour. This is a very easy recipe that will render you delicious and healthy candied ginger.
Make sure to keep the fantastic ginger syrup that you will have left over. Keep it in the fridge and use it to sweeten tea, coffee, lemonade, over pancakes, over oatmeal and even over ice cream. It is truly delicious.
Ginger and honey are great for your immune system. They are also very good for helping with colds and coughs. I love it as a snack -- 1 a day to keep the doctor away!

1 pound (500 grams) ginger root
1 1/2 cups (350 ml) water
1 1/2 cups (510 grams) honey
You can leave the skin on the ginger if you would like but you will need to scrub the root well to take off all the dirt.
If you are going to peel it, the easiest way is using a spoon. Simply scrape off the peel. Cut off any little pieces that you cannot reach.
Slice the ginger into thin slices. This is better is the slices are not thick.
Place the slices in a pan and add the water and honey.
Place the pot on a burner and start stirring on medium heat, until the honey dissolves. Reduce the heat, cover the pan, and simmer for 30 minutes.
Remove the lid and continue simmering for another 30 minutes.
Take one slice out of the open and pierce it with a fork. If the fork goes through easily the ginger is done. If it is still hard, you will have to simmer longer — until you can pierce it.
Strain the ginger into a pitcher, shaking until all of the excess liquid is removed. Store the ginger syrup in a jar, in the fridge, for other uses.
Slowly place the ginger slices on a cooling rack over a baking sheet — you can also place them directly onto a parchment or wax paper lined baking sheet. Leave the candied ginger on the rack for a minimum of 12 hours.
Store in a closed container in the fridge and enjoy.
