How To make Country Captain Chicken
4 tb Butter
1 ea Small onion, finely chopped
1/2 ea Sweet pepper, finely chopped
2 ea Garlic cloves finely chopped
2 tb Vegetable oil
1/2 c All purpose flour
1 1/2 ts Salt
1 ts Pepper
3 lb Chicken serving size pieces
1 c Plum tomatoes
2 c Chicken stock
2 tb Curry powder
1/4 c Dried shredded coconut
1/4 c Sultana raisins
1 x Salt and pepper to taste
1 ea Slived almonds to garnish
1 ea Chopped parsley to garnish
Melt butter in skillet large enough to hold chicken in one layer. Add onion, carrot green pepper, garlic and cook until tender, about 5 minutes. Transfer to saucepan. Add oil to skillet. Combine flour, salt and pepper in bowl. Roll chicken in flour mixture, cook in hot oil until nicely browned. Drain off any excess oil. Add tomatoes, their liquid, stock and curry powder to sauce with cooked vegetables. Bring to boil over medium heat. Pour over chicken and simmer for 15 minutes. Stir in coconut and raisins; simmer for 5 minutes longer. Test chicken for doneness, check seasoning. Arrange chicken in serving bowl. Garnish with almonds and parsley. Serve with boiled rice.

Country Captain Chicken
Ingredients:
2 onions, minced
1 green bell pepper, cut into 1 inch pieces
5 T tomato paste
2 T curry
4 garlic cloves, minced
1 T vegetable oil
1 t dried thyme
1 1/2 t sweet paprika
1/4 t cayenne pepper
1 (14.5 oz) can diced tomatoes
1 cup mango chutney
3/4 cup chicken broth
12 chicken thighs (bone in, skin removed)
Salt/Pepper
Cook on low 4-6 hours
Garnish
2 T fresh minced parsley
1 Granny Smith apple chopped into small pieces.

Steps:
1. Heat oil in pan add pepper, cinnamon, cloves, cumin. Add and fry onion and keep aside some.
2. Add chicken marinated with tumeric, salt and chilli powder
3. Add ginger garlic paste and cook for 5 minutes on medium flame
4. Add the fried onions and cook till chicken is cooked
The simple easy and delicious chicken curry is ready.

• Shan Meat Tenderizer
Methods
Heat oil in a pan add Nigella Seeds, cumin seeds,methi seeds followed by ginger garlic paste ,saute well then add red chilli powder ,turmeric, and garam masala now u can add marinated chicken ( marinated with shan meat Tenderizer) stir well pressure cook for 5 minutes...till it becomes tender and dry ..
Heat oil in a different pan add curry leaves and then add cooked chicken ...and stir well...

It is a dish that was a favourite of George S Patton, the famous American Army General during World War II. It is a dish extremely popular throughout the southern US and UK. It was introduced to the world by the Anglo Indians. This dish was cooked on Portuguese country boats by the captive Moggs. As it was cooked on country boats for the captains, hence this name. Try it out in the forthcoming festive season.
