How To make Coconut Molasses Muffins
2 c AM Whole Wheat Flour
2 ts Non-alum baking powder
1/2 ts Sea salt (optional)
1/2 ts Ginger
1 c Flaked unsweetened coconut
1/4 c AM Unrefined Vegetable Oil
1 Egg or egg replacer
2/3 c Buttermilk
1/2 c Unsulphured molasses
-OR- honey 1 ts Pure vanilla
In mixing bowl stir together flour, baking powder, salt, ginger and coconut. Mix liquid ingredients and add to the dry mixture until moistened. Fill well-greased muffin tins 2/3 full. Bake at 350 F. for 20-25 minutes.

These are tasty and nutritious, plus a great way to use up a jar of coconut oil you may or may not be using. I did a nutritional analysis on these: each muffin is 187 calories with 4g protein, 6.4g fat, 32.8g carbohydrate and 5.4g fiber.
MOIST Bran Muffins w/Raisins. THE BEST!!
I’ve tried to perfect muffins MANY TIMES to make them moist and not dry. Especially the next day, different recipes seem to dry out overnight. However! :-) These ones are a sure winner. I like that they don’t have white sugar in them also. I used raisin bran cereal this time, but you can use any brand cereal you like. Please follow along as I explain a little tips and tricks along the way. One of them is using cupcake papers and the difference between using theirs and not using those. Ingredients:
2 medium eggs
pinch of salt
30 g sweetener(stevia/or your choice)1/4 cup
1 teaspoon vanilla paste/ vanilla extract
120 g yogurt (1/2 cup)
50 ml vegetable oil(1/5 cup)
1 apple
70 g blueberries(1/2 cup)
100 g rolled oats(1 cup)
7 g baking powder(1/2 tbsp)
bake 20-25 minutes at 180°C/ 360°F
