How To make Citrus Chicken
225 g pickling onions
2 tbsp vegetable oil
4 x 125-150g chicken breast fillets
with skin on
150 ml fresh chicken stock, or made with cube
2 tsp freshly grated fresh root ginger
1 large garlic clove :
finely chopped
2 tsp wholegrain mustard
1 tsp finely grated lemon zest
1 tsp finely grated orange zest
3 tbsp lemon juice
3 tbsp orange juice
2 tbsp clear honey
salt and freshly ground black pepper 2 (2-3) sprigs fresh thyme
2 tsp cornflour
1. Put the pickling onions into a bowl and cover with boiling water. Leave for 2-3 minutes. Drain, then remove the skins from the onions using a sharp knife.
2. Heat the oil in a large, flameproof casserole. Add the onions and cook for a few minutes until golden brown. Add the chicken breasts and brown on both sides. Reduce the heat and cook gently, uncovered, for 15 minutes.
3. Put the remaining ingredients, except the thyme and cornflour, into a jug and mix together. Pour over the chicken. Add the thyme, cover and cook for 15-20 minutes until the chicken is cooked.
4. Remove the chicken and onions and place in a warm serving dish. Blend together the cornflour and 2 teaspoons water and stir into the cooking juices. Heat gently, stirring until it has thickened. Season to taste. Pour the sauce over the chicken and serve with boiled potatoes and a green vegetable.

Citrus Chicken

Ingredients
4 pounds bone-in chicken thighs
3/4 cup freshly squeezed orange juice, about 2 oranges
2 tablespoons grated orange zest
1 teaspoon salt
2 teaspoons freshly cracked black pepper
1 teaspoon chiffonade fresh mint leaves
1 1/2 tablespoons chiffonade basil leaves
3 tablespoons white balsamic vinegar
3 tablespoons minced shallots
1 tablespoon celery seeds
Glaze, recipe follows
Glaze:
1 tablespoon olive oil
1 tablespoon minced shallots
1 teaspoon minced ginger
1/2 cup orange marmalade (look for marmalade with small rinds)
1/4 cup sweet chili sauce
1 tablespoon white balsamic vinegar
1/4 cup reserved marinade, strained
Directions
Combine all the ingredients in a large resealable plastic bag and refrigerate for 6 to 8 hours.
Preheat the oven to 350 degrees F.
Remove the chicken from the marinade, reserving 1/4 cup for Glaze and put the chicken in a 13-by-9-inch pan and bake for 45 minutes. Baste with the Glaze, turn the pieces over and bake for an additional 15 to 25 minutes, basting every 7 minutes. Remove from the oven and arrange the chicken on a serving platter.
Glaze:
In a small saucepan, over medium-high heat, add the olive oil. When the oil is hot add the shallots and ginger and saute for 3 minutes. Add the remaining ingredients and reduce heat to a low simmer. Cook for 15 minutes. Baste the chicken with the glaze after 45 minutes.

1/4 Teaspoon of Dried Chilli Flakes
1/2 Teaspoon of Smoked Paprika
2-3 Cloves of Garlic (minced - about 3 to 4 teaspoons)
1 Large Lemon (sliced)
1 Orange (sliced)
2 Small Red Onions (peeled and quartered)
Salt and Pepper
Preparation Time: About 10 minutes
Cooking Time: About 1 hours

4 chicken breast
2 Lemons
4 garlic cloves
2 to 4 Tbsp butter
2 to 4 Tbsp olive oil
1 Tbsp garlic powder or onion powder
1 cup corn starch
1 cup Ap Flour
1 small white onion
1 tsp black pepper
1 1/2 cups water
