DOWN-HOME BREAKFAST: EGGS, CHORIZO & POTATOES/Breakfast Burritos/Huevos con Chorizo y Papas
Thought I'd shoot a few Down-Home Breakfast videos for you, and I'm kicking it off with Eggs, Chorizo and Potatoes. It's something I grew up on, and therefore, I make all the time. In Spanish, we call it Huevos con Chorizo y Papas, and often we turn it into a Breakfast Burritos for eating on the go. There's not much to it, so I won't have a written recipe for you this time. But I hope you enjoy the simplicity of how it's made and that it gives you an idea of what to make for breakfast.

Slimming World Syn-free chorizo breakfast hash recipe - FREE

Syns per serving: FREE
500-600g cooked new potatoes
low calorie cooking spray
2 onions, thinly sliced
2 sliced red peppers
8 Slimming World chorizo style sausages (available from Iceland ) thawed and cut into thick slices
4 large eggs
salt and freshly ground black pepper
Spray the base of one large non-stick frying pan with low calorie cooking spray and place it over a medium-low heat. Add the onions and peppers and cook for 10 minutes until tender and lightly golden.
Spray the base of another large non-stick frying pan with low calorie cooking spray. Add the thawed slices of chorizo style sausage and fry for 5 minutes until golden brown all over. Spoon onto a plate and add the potatoes to the pan and fry for 5 minutes, until golden brown.
Stir the onion and pepper mixture and the chorizo sausages into the potatoes and keep warm until the eggs are ready.
Spray the base of a clean frying pan with cooking spray and place it over a medium-high heat. Break in the eggs and cook until the yolks are to your liking. Lift them on top of the hash, take to the table and serve straight away.
Tip: Serve with grilled tomatoes and mushrooms

Mexican Chorizo Breakfast Hash With Potatoes And Fried Egg Sunny Side Up Recipe
Mexican chorizo breakfast hash is an incredibly satisfying recipe that is versatile enough for you to customize to your tastes! Join Eric from Simply Elegant Home Cooking as he demonstrates his version of this classic dish! One of the best things about cooking hash is that there are no limitations in regards to the seasonings and ingredients. Today we use chorizo, but really any type of meat works and there are even vegetarian recipes as well. Also, just about any vegetables can be used. This is a great dish to use up whatever you have on hand in your fridge, including left overs. Some of the most common vegetables Eric uses are onion, bell pepper, cherry tomatoes, mushrooms, and spinach. However, feel free to add ANYTHING you like when you cook your own Mexican chorizo breakfast hash! One of the most important steps is the cut the potatoes very small. This is the only way to get a good, crispy result in the pan while still having a tender and fully cooked interior of the potato.
