How To make Chorizo a La Mexicana(Mexican Sausage)
1 lb Lean pork
2 tb Chili powder
1 t Oregano, handrubbed
1 t Salt
1 ea Garlic clove, pressed
2 tb Vinegar
Grind coarsely or chop pork. Add all other ingredients and mix thoroughly. Let stand for several hours. Fry without adding fat for about 30 minutes. If you aren't going to use immediately, pack the uncooked chorizo in a crock or glass jar and keep in refrigerator. Salchichas a la Mexicana
Muchachitos, para hoy queremos compartir con ustedes unas deliciosas salchichas a la mexicana.
Ingredientes:
1. 5 Salchichas - de pavo preferentemente -.
2. 1 jitomate - picado finamente -.
3. 1/2 cebolla - picada finamente -.
4. 3 chiles serranos - picados finamente -.
5. Aceite.
Preparación:
1. Colocamos una sartén en el fuego.
2. Añadimos aceite - dejamos calentar -.
3. Añadimos la cebolla - dejamos acitronar la cebolla -.
4. Añadimos el jitomate - dejamos cocinar hasta que suelte jugo el jitomate -.
5. Añadimos el chile - dejamos cocinar por 2 minutos -.
6. Añadimos las salchichas - dejamos cocinar por unos 10 minutos -.
¡Listo! tenemos terminadas nuestras salchichas a la mexicana.

Traditional Mexican chorizo has very little texture as it has a ton of fat, I wanted the flavors of chorizo but I also wanted to make it into a sausage you can enjoy on a bun like a traditional sausage.
