How To make Chinese: Szechwan Noodles with Green Onions
Ingredients

pound
chinese noodles, (not canned)
3 1/2
tablespoon
sesame oil, dark brown
3 1/2
tablespoon
soy sauce
2
tablespoon
rice vinegar
2
tablespoon
sugar, or to taste
1
teaspoon
hot chili oil, or to taste
6
each
green onions, sliced finely on the bias, divided
1
sesame seeds, black, optional
1
cilantro, optional, fresh
1/4
cup
bbq pork, optional
Directions:
Bring a generous amount of unsalted water to a boil. Add the noodles (all at once) for approximately 2 minutes, or until al dente (toothy but firm). Use chopsticks or two wooden spoons to separate noodles as they cook. Do not overcook.
Empty noodles into a large colander, then immediately flush with cold running water until cool. Shake off excess water and drain for 15 to 30 minutes.
Combine sesame oil, soy sauce, vinegar, sugar and chili oil; mix well. Pour over noodles and use your hands to evenly distribute seasoned sauce. Work carefully so noodles don't break. Gently spread sauce over each strand and allow the noodles to fully absorb sauce before eating.
Add all onions except 2 tablespoons. Toss and mix to evenly distribute the onions. Garnish with remaining onions, sesame seeds and cilantro, if desired.
Noodles taste best if they are allowed to sit and the flavors meld for a few hours before serving.
Serve refrigerated and cold, or at room temperature.

Dan Dan Noodles (Spicy Sichuan Noodles)
This is how to make Dan Dan Noodles, the iconic spicy Sichuan noodles!
LOADS OF SUBS in the recipe. Even if you used every sub provided, it might not end up tasting exactly like authentic Dan Dan Noodles, but it will still be similar and a damn tasty bowl of noodles!!
PRINT RECIPE:

Ingredients
- 280g flour
- 160g warm water
- A pinch salt
- 3 tbsp veg oil
- 2 cloves garlic, minced
- 2 spring onions finely sliced
- 1 tsp chilli flakes
- 0.5 tsp cumin seeds
- 0.5 tsp Szechuan peppercorns
Method
1. Start by making the dough. In a mixing bowl place the flour and salt. Make a well in the centre and pour in the water.
2. Mix until it comes together and you have a shaggy dough. Then turn it out and knead for 6-7 minutes or until you have a smooth dough.
3. Cut into 4 pieces and roll into rounds.
4. Pour 0.5 tsp of oil into a bowl and place the dough ball into it, cover and let rest for 1 hour.
5. When ready, place a large pot of salted water on to boil, and the remainder of the oil in a small pot to heat.
6. Working with one dough ball at a time, flatten it out then make a divot in the centre with a chopstick. Then grab each end and pull to stretch it. Once you have pulled it to around 1 metre, tear the strip in half.
7. Place the pulled noodles into the boiling water and cook for 3-4 minutes.
8. Place the garlic, spring onions, chilli, cumin and Szechuan peppercorns into your bowl.
9. Carefully pour the hot oil over the spices and veg in the bowl before adding in the cooked and drained noodles. Give them a mix and you are good to eat.
