How To make Chicken Szechuan Style with Sesame Paste
2 Whole chicken beasts,
Skinned and boned 2 tb Szechuan peppercorns
4 tb Sesame paste
3 tb Green tea
2 tb Wine vinegar
2 1/2 ts Soy sauce
3 tb Peanut oil
2 ts Crushed red pepper *
3 Slices fresh ginger, minced
1 Scallion (white part only),
Chopped 1 cl Garlic, minced fine
1 1/2 tb Dry sherry or
Shaoshing wine 1/2 ts Cayenne pepper
Lettuce leaves * or you substitute 2 whole chili peppers, crushed. In a pot, poach the chicken breasts in a little boiling water for 10 minutes until white and opaque. In a dry frying pan, toast the Szechuan peppercorns over moderate heat, then crust or grind them; set aside. Remove the chicken breasts from the pot, drain and cool them. Slice them, then shred the slices into julienne pieces. In a mixing bowl, combine the sesame paste and green tea (or the peanut butter and sesame oil
See NOTE). Add the vinegar and soy sauce; blend well. Add the peanut oil, red pepper, ginger, scallion, garlic, sherry, cayenne pepper, and the peppercorns. Mix all ingredients very well. Toss the chicken strips in this sauce, to coat. Refrigerate until 20 minutes before serving. Pass the chicken and the lettuce leaves separately, and let each guest place a small portion of the chicken in the middle of a lettuce leaf and roll it up like an egg roll to eat using fingers. Makes 6 appetizer servings. NOTE: The authentic recipe calls for green tea to thin the sesame seed paste, but you may substitute chicken broth, or simply water, if you prefer. Another substitution you may make if you wish is peanut butter for the sesame seed paste along with sesame oil instead of green tea. This dish is served cold or at room temperature and can be made a day ahead . :

Marinating the chicken

1 spring chicken (800-900g)
1.5 tablespoons of oyster sauce
2 tablespoons of Chinese cooking wine (Shaoxing Huatiao wine)
2 teaspoons of cornflour
Juice from 1 thumb size ginger (retain the pulp after juicing)
Putting the dish together

1/3 cup of sesame oil
2 thumb size ginger - smashed
3 cloves of garlic - minced
Pulp of juiced ginger (as above)
Marinated chicken
1 can of button mushrooms
1/3 cup of Chinese rice wine
Brine from a can of button mushrooms
2 tablespoons of low sodium light soya sauce
1 tablespoon of oyster sauce
2 tablespoons of premium dark soya sauce
0.5 teaspoon of chicken stock powder
1 teaspoon of sugar
Some cornstarch solution
1 tablespoon of Chinese cooking wine

2 rmedium sized red onions (can be replaced with yellow onions)
2 dried chilli - rehydrated
4 cloves of thinly sliced garlic

Easy Spicy Szechuan Chicken that you can make at home!
this Spicy Szechuan chicken stir fry is made with Szechuan (Sichuan) peppers for that tongue-tingling heat. Plus plenty of dried red chillies too!

Szechuan chicken, also known as Sichuan chicken, Mala Chicken or Laziji, is a beautifully spiced stir-fried chicken dish, usually served dry, rather than saucy, and characterised by the use of Szechuan peppercorns and lots of dried red chillies.

INGREDIENTS:
Chicken and marinade:
▢8 boneless chicken thighs - chopped into bitesize chunks
▢1 tbsp dark soy sauce
▢1 tbsp light soy sauce
▢1 tbsp Chinese rice wine
▢¼ tsp white pepper
▢2 tbsp cornflour - cornstarch
For Frying:
▢240 ml (1 cup) sunflower oil
▢1 tbsp sesame oil
▢1 onion - peeled and chopped into chunks
▢25 dried red chillies - – chop 5 of them into small pieces and leave the rest whole
▢1 ½ tsp Sichuan peppercorns - ground using a pestle and mortar (the 1 ½ tsp is measured BEFORE grinding)
▢3 cloves garlic - minced
▢2 tsp minced ginger
▢5 spring onions - scallions roughly chopped
▢2 tbsp light soy sauce
▢1 tbsp Chinese rice wine
▢1 tbsp chilli bean paste - *See Note
▢1 tbsp sugar
INSTRUCTIONS
Place the chicken pieces in a bowl with the rest of the marinade ingredients.
Stir together, cover and marinade for 30 minutes (or up to a couple of hours – place in the refrigerator if marinading for more than 30 minutes).
Heat the oil (reserving 1 tbsp for later) over a medium-high heat in a large frying pan.
Add the chicken, a piece at a time (you may need to work in 2 batches), and cook for 4-5 minutes, turning a couple of times, until golden.
Remove from the pan and place on a plate.
Heat the reserved 1 tbsp of sunflower oil along with 1 tbsp of sesame oil in a wok over a medium-high heat.
Add the onion and dried chillies and stir fry for 2-3 minutes, stirring often, until the onion starts to soften slightly.
Add in the ground Sichuan peppers and fry for a further minute.
Add in the garlic, ginger and spring onions and stir fry for a further 30 seconds.
Add in the soy sauce, rice wine, chilli bean paste and sugar. Stir together and fry for another minute.
Add in the cooked chicken and toss everything together, heating for a further minute or two until the chicken is hot.
Serve with boiled rice.
✎ NOTES
Chilli Bean Paste - known as toban djan or doubanjiang – if you can’t find this, you can replace with Gochujang (a Korean Chilli paste that’s little sweeter, but still good), or at a push, hoisin sauce mixed with a good pinch of chilli flakes.

Today I'm sharing the Sichuan Chicken Recipe cooked with an air fryer! Instead of deep frying the chicken pieces in oil, we air fry the chicken to achieve the same effect! This recipe saves so much time and oil and is a lot more healthier too! It is really tasty too:)
