Homemade Classic Diner Chicken Croquettes
Nothing reminds me of a diner more than the classics! Chicken croquettes bring me back to trips to the diner back in the day! Big pile of mashed potatoes with pyramids of fried chicken goodness smothered in a thick yellow gravy! You just don’t find them anymore! Well, like bell bottoms, let’s bring this classic back to life with a nice easy recipe that you can do at home with ingredients probably already on hand!
INGREDIENTS
Croquettes
2 cups roasted chicken, shredded
1 (10 1/2 ounce) can condensed cream of chicken soup
1 (6 ounce) box seasoned stuffing mix, mix for poultry
1 large egg, slightly beaten
1/2 teaspoon onion powder
1/4 teaspoon poultry seasoning
1 teaspoon dried parsley
breadcrumbs, for dredging
1 cup vegetable oil, for frying (may need more or less)
Gravy
1 (10 1/2 ounce) can condensed cream of chicken soup
1 cup 2% low-fat milk
1 teaspoon dried parsley
DIRECTIONS
Croquettes
Mix the chicken, soup, stuffing mix, egg, onion powder, parsley, and poultry seasoning.
Refrigerate 3 hours minimum. (Overnight is better)
Create a cone shape from about 3/4 cup of mixture. (about 3 high, 2 in diameter), or you can make patties for easier frying.
Roll croquettes in bread crumbs.
Fry in about 1/2 of 350 degree oil in skillet over medium heat turning occasionally till golden brown on all sides and bottom, about 10-15 minutes. For a healthier version, they can be baked at 350F for about 25 minutes.
Gravy:
In a small saucepan, stir the remaining can of soup with milk and parsley , stirring until warmed and creamy.
Pour over croquettes or serve sauce on the side.
Served atop a mound of mashed potatoes to complete the classic dish!

Chicken Croquettes
- 120g / 4.5oz Butter
- 1/2 Med Onion, or 1 small
- 120g / 4.5oz Flour
- 1L / 4 cups Milk
- 350g / 12.5 oz Shredded Chicken
- 1 TSP nutmeg or to taste
- Salt to taste!

Method
- melt the butter over medium heat
- add onions and cook until they are transparent
-Next, add the flour little by little, and continue
stirring vigorously for 2 mins (roux).
-now, add the milk to the roux, stir continuously,
and continue cooking for about 2 minutes
-Season to taste the salt and nutmeg.
-Add the chicken and mix well!

Method to roll
-let the dough cool in the fridge for a few hours or until cold
-Next, take a tablespoon of the mixture and shape the croquettes,
about the size of a wine cork.
-when shaping them, flour or oil your hands.
-now Pane (flour, egg, and breadcrumbs).
-To make it easier, you can freeze them in flour and pane later.
-finally, deep-pan to fry in, (to protect you from the oil!)
the oil must completely cover the croquettes when frying

1 cup = 250 ml; Tbsp. = Tablespoon = 15 ml; tsp. = teaspoon = 5 ml
Ingredients:
250g Boneless Chicken
1 ¼ cups Potato
1 ¼ cups Onion
Breadcrumbs
1 Tbsp. Ginger / Garlic Paste
½ tsp. Turmeric Powder
1 ½ Tbsp. Lime Juice
½ Tbsp. Garam Masala Powder
1 Green Chilli
1 Tbsp. Fresh Coriander
3 Tbsp. Tomato sauce
3 Tbsp. Mayonnaise
Cooking Oil
1 Egg
Salt to Taste
Makes: About 10 Croquettes

Chicken Croquettes | Potato chicken croquettes| Chicken Appetizer | Iftar recipe
A delicious chicken appetizer with simple ingredients.
Ingredients:
Boiled and shredded chicken - 300 g ( cook with salt and pepper)
Boiled Potato-1 medium size. ( Mash or grate it)
Unsalted butter-40g
Onion-1 medium sized ( chop finely)
Green chilli-1 ( finely chopped)
Garlic-1 tablespoon ( finely chopped)
Plain flour ( Maida)-3 tablespoon
Chicken stock - 1/2 cup ( I used the stock got from the cooked chicken.) You can use 1/2 chicken stock cube to make the stock. Or use 1/2 cup milk.
Chilli flakes-1 teaspoon
Pepper powder-1/4 teaspoon
Salt-1/4 teaspoon ( to taste)
garam masala / spice mix - 1/4 teaspoon
Coating:
Egg-2
Plain flour ( Maida)-2 tablespoon
Bread crumbs -1 cup ( approx)
Oil for frying
Method:
1. cook chicken with salt and pepper and shred it.
2. Heat a pan and melt the butter.
3. Add onion and saute until transparent. Add garlic, and green chilli and saute for a minute.
4. Reduce the heat and add the flour . Stir and cook for about 2 minutes.
5. Pour chicken chicken stock and cook until thickens by stirring constantly.
6.add the cooked chicken, chili flakes, pepper, and salt. Mix and let it cool.
7. Grate and mix the boiled potato with the chicken, add garam masala / spice mix, combine everything.
8. Apply oil in palm and shape the croquettes.
9. Coat with plain flour, dip in beaten egg then coat with bread crumbs.
10. Heat oil for frying, drop the croquettes in hot oil. Fry until golden, flipping in between.
11. Serve hot.
