How To make Chicken Croquettes
3 tb Butter
3 tb Flour, plus extra for
-dredging 1/2 c Plus 1 Tbsp. milk
1/4 ts Salt
1/4 ts Pepper
1/2 c Mayonnaise
2 c Minced cooked chicken
1 Egg, beaten
1 c Finely crushed saltine
-cracker -crumbs Melt butter in a heavy saucepan over low heat; add 3 Tbsp. flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add 1/2 cup milk; cook over medium heat, stirring constantly, until mixture leaves sides of pan. Stir in salt and pepper. Remove from heat; stir in mayonnaise and chicken. Cover and chill 1 hour. Shape chicken mixture into 6 balls or logs. Combine egg and 1 Tbsp. milk, mixing well. Dredge croquettes in flour, dip in egg mixture, and roll in cracker crumbs. Deep-fry, a few at a time, in hot oil (370 degrees) for 3 to 5 minutes, or until golden brown. Drain on paper towels. CHICKEN CROQUETTES
RECIPE IN ENGLISH:
INGREDIENTS:
• Chicken (Boiled & Shredded) 1 ½ Cup
• Butter 2 tbsp
• Onion (Chopped) 2 tbsp
• Flour 4 tbsp for mixture
• Flour 3 tbsp for coating
• Milk 1 Cup
• Coriander (chopped) 2 tbsp
• Mustard Powder ½ tsp
• Salt 1 tsp
• Black pepper ½ tsp
• Lemon Juice 1 tbsp
• Eggs (beaten) 2
• Oil for deep fry
• Bread Crumbs 1 ½ Cup
METHOD:
o Boiled the chicken with some salt & peppercorn and then shred it with hands. Keep aside.
o Heat Butter and slightly fry onions till soft.
o Add Flour and saute till it becomes lightly gold.
o Now remove the pan from heat and start adding milk and keep whisking to avoid lumps.
o At this stage it becomes like a ball.
o Now add seasoning, lemon juice and boiled/mashed chicken
o Shape the croquettes as desired, dust them in flour (3 tbsp), dip in eggs and roll them in Bread crumbs.
o When all the croquettes done, keep them in freezer for 5-10 mins for better firming.
o Deep fry them on medium heat till golden.
o Serve with your favorite sauce.
RECIPE IN URDU:
AJZA:
• Chicken Ubli & resha hue 1 ½ Cup
• Makhan 2 tbsp
• Piyaz 2 tbsp
• Maida 4 tbsp ameze keliye
• Maida 3 tbsp coating keliye
• Doodh 1 Cup
• Hara Dhania 2 tbsp
• Mustard powder ½ tsp
• Namak 1tsp or to taste
• Kali Mirch powder ½ tsp
• Leemon ka rus 1 tbsp
• Anday (Phnetay hue) 2
• Oil deep Fry ke liye
• Breadcrumbs 1 ½ Cup
Bananay ka Tareeqa:
o Chicken ko thore se namak and kali mirch ke sath boil karlen, aur haath se resha kar ke alag rakh lein.
o Pan main makhan garam Karen and us main piyaz shamil Karen and naram hone tak pakaye.
o Is main ab maida shamil shamil karke pakaye ke uskab colour halka change hojaye.
o Pan ko heat se hataye aur us main doodh shamil Karen. Doodh shamil karte waqt isko whisk karte rahe take lumps nahi bane and ball ke surat ban jaye.
o Is main namak, kali mirch, mustard shamil kare.
o Ab is main ubli hue chicken aur lemon ka rus daalein
o Croquettes ke shape banaye and isko 5-10 mins ke liye freezer main rakh dein.
o Iske baad deep fry kare darmiyani aanch pe jab tak golden na hojaye.
o Apni pasand ki sauce k sath serve Karen.

Today I will teach you how to make Spanish Chicken Croquettes from start to finish! Croquettes are one of the most consumed tapas in Spain per person, per year! and everyone has their own recipe! this recipe is a professional one that I have learned during my time here, so I hope you guys will enjoy it!

Chicken Croquettes
- 120g / 4.5oz Butter
- 1/2 Med Onion, or 1 small
- 120g / 4.5oz Flour
- 1L / 4 cups Milk
- 350g / 12.5 oz Shredded Chicken
- 1 TSP nutmeg or to taste
- Salt to taste!

Method
- melt the butter over medium heat
- add onions and cook until they are transparent
-Next, add the flour little by little, and continue
stirring vigorously for 2 mins (roux).
-now, add the milk to the roux, stir continuously,
and continue cooking for about 2 minutes
-Season to taste the salt and nutmeg.
-Add the chicken and mix well!

Method to roll
-let the dough cool in the fridge for a few hours or until cold
-Next, take a tablespoon of the mixture and shape the croquettes,
about the size of a wine cork.
-when shaping them, flour or oil your hands.
-now Pane (flour, egg, and breadcrumbs).
-To make it easier, you can freeze them in flour and pane later.
-finally, deep-pan to fry in, (to protect you from the oil!)
the oil must completely cover the croquettes when frying
