Coconut Milk Chicken Adobo
Adapted from a recipe by: Angela Dimayuga for the New York Times
Serves 6 to 8
2 tbsp. (30 mL) coconut oil
15 garlic cloves, roughly chopped
2 tsp. (5.8 g) whole black peppercorns
1/2 tsp. (1.5 g) freshly ground black pepper
1/2 tsp. (0.9 g) red-pepper flakes
3 - 4 lbs. (1.36 - 1.81 kg) bone-in, skin-on chicken drumsticks and thighs
1 cup (240 mL) unsweetened coconut milk
1/2 cup (120 mL) coconut vinegar
1/2 cup (120 mL) soy sauce
8 fresh bay leaves
cooked rice, for serving

Chicken Adobo with Coconut Milk or Adobong Manok sa Gata is a Filipino version of adobo that is cooked with coconut milk. The chicken is simmered, adobo style then finished with coconut milk. Chicken Adobo sa Gata or Chicken Adobo with Coconut Milk is a delicious comforting dish so simple to make and most of the ingredients are readily available in a Filipino kitchen.

CHICKEN ADOBO | CHICKEN ADOBO in COCONUT MILK | GATANG ADOBO | PINOY SIMPLE COOKING
ADOBO is a popular Filipino dish which has rich flavors of vinegar and soy sauce. There are different ways to make adobo ,this version uses coconut milk and oyster sauce which makes it more flavorful. So quick and easy to make. Easy recipe to satisfy your cravings! Happy Pinoy Simple Cooking!
Here is how to make COCONUT MILK CHICKEN ADOBO:
COCONUT MILK CHICKEN ADOBO RECIPE :
Ingredients:
1 1/2 lbs boneless chicken thighs
1 head garlic, peeled and pressed
1/2 cup vinegar
2 tbsp soy saice
2 tbsp oyster sauce
1 cup water
1 cup coconut milk
5 dried bay leaves
2 green chilies, sliced
2 tbsp chopped parsley
1/2 tsp salt
1/2 tsp pepper, divided
4 tbsp oil, divided
Directions:
1. In a pan or wok, heat oil over medium high heat.
2. Add garlic. Sauté until lightly browned.
3. Add chicken, season with salt and pepper. Sear until meat is browned on all sides.
4. Add vinegar, let it simmer for 5 mins. Do not stir.
5. Add water, soy sauce, oyster sayce, bay leaves and pepper. Stir until well combined.
6 Cover with lid and let it simmer over medium heat for 30 mins. Stir occasionally. Flip the chicken at 15 mins to cook the other side.
7. Remove chicken and sauce from the pan.
8. In the same pan, add 2 tbsp oil. Heat over medium high heat. Refry the chicken.
9. Add back the sauce. Add the coconut milk. Stir until well combined.
10. Bring to low heat and simmer until sauce reduce and thickens. Stir occassionally.
11. Add green chilies and chopped parsley. Continue to simmer for 3 mins.
12. Serve and Enjoy! Best served with steamed rice.

This recipe is my version Chicken adobo with Coconut milk . It is similar to Filipino Chicken Adobo except I added coconut milk (Gata). Chicken Adobo with Coconut milk is not only tasty but also every mouthful of ii is definitely flavorful, rich and creamy. My family really like this recipe. Hope you enjoy this recipe as well. *** Chicken Adobo with Coconut Milk / Adobo sa Gata ***
6 - 8 pcs. chicken thigh
1/2 cup vinegar ( distilled white vinegar ,sugar cane vinegar ,apple cider vinegar)
1/2 cup soy sauce
1/2 Tbsp pepper corn ( 1/4 whole and 1/4 crusted)
1 medium size onion
5 pieces bay leaves
8-10 cloves , crushed
2 cups coconut milk
1/2 red bell pepper
chopped parsley for garnish ,optional
Ginger root ,lemon juice or calamanse juice can be added if you like
Ingredients can be adjusted base on your taste and preference
