2 lbs potatoes 1 egg 1 1/2 teaspoons salt 1/2 cup cottage cheese 1 cup flour Nutmeg to taste 1/4 lb. butter -- melted Peel potatoes; boil until tender. Mash; cool. Add egg, salt, cheese, flour and nutmeg; mix well. Knead lightly until smooth. Shape into long thick roll; cut into 1 inch pieces. Roll into dumplings. Cook in rapidly boiling salted water until dumplings rise to surface; simmer for 5 to 7 minutes longer or until cooked through. Drain; pour butter over dumplings.

If you don’t have access to traditional bryndza cheese, you can replace it with finely crumbled (in food processor) feta cheese – you want to turn feta into a thick paste. Give yourself this salty, yummy treat – with crunchy bacon on top. Cheese and Potato Dumplings / Pierogi Ruskie
This is perfect pierogi filling combination. It contains equal amounts of farmers cheese and white potatoes with perfectly balanced amount of yellow onion just slightly translucent in a ideally stuffed pierogi dough exactly as my mom used to make. This kind of a dough will not stick to your board, the roller or your hands, therefore there is no need to use additional flour. A must try recipe. Yields approximately 50 pierogi.
