How To make Carolines with Asparagus and Lemon
2 dozens asparagus
4 ounces crab meat
1 whole lemon
1 tablespoon shallot -- chopped
1 tablespoon heavy cream
2 ounces butter
dill salt and pepper
1. Cook the asparague and cool in cold water. Reserve.
2. Prepare the sauce by boiling the lemon juice with 1/4 cup water and the shal lots. Let simmer until the liquid is completely evaporated. Add the cream and l et boil until thick. Whisk in the butter cut into cubes, keeping the pan over t he heat. Remove when the butter is melted. Season with salt and pepper, add cho pped dill.
3. Reheat the asparagus by pouring boiling water on towel into which the separa ted asparagus have been placed.
4. If using crabmeat, place the crabmeat in a small pan with 1/2 of the butter sauce and heat. Do not allow to boil.
5. Make a Pate A Chou.
6. Cut each choux in half. Place some crabmeat in the bottom of each and place 3 asparagus spears on top. Cover with some lemon butter sauce and place the top of the choux on to cover.

MARINADE
¼ cup extra virgin olive oil (60 ml/4T)
¼ cup lemon juice (60ml/4T)
1 T garlic minced
2 T shallots minced
1 T cilantro minced or other green herb
1 t salt
½ t pepper
SKILLET SAUCE
2 T olive oil
1 T garlic, minced
1 ½ cup fish broth or vegetable broth
¼ c cream (optional)
2 T lemon juice and zest of one lemon
salt and pepper to taste
½ cup Parmesan cheese, finely grated
Parmesan cheese, herbs to garnish

KETO LEMON BUTTER MAHI & ASPARAGUS | Easy Keto Fish Recipe | Suz and The Crew
This week I made some awesome and easy keto mahi-mahi and asparagus. This recipe was inspired by the Delish one, linked down below. I ended up changing it significantly, by accidentally grabbing cilantro instead of parsley! What a happy accident that turned out to be! I will be writing up my own version of this super simple keto recipe, but until then feel free to refer to theirs and just print and edit it if you wish to make it the way I did. Also, while we chose to use mahi-mahi in this recipe, it would probably work well with any type of fish you wish to cook. You could also easily sub out the asparagus for another low carb vegetable as well.
