1/2 c Butter
1 1/2 lb Yellow onions; sliced 3/8" t
1 tb Sugar
1/4 c Madeira
Parmesan cheese Recipe by: "The New James Beard" Melt the butter in a skillet, add the onion, and cook, covered, over medium heat until soft and transparent. Uncover, stir in the sugar, reduce the he and cook gently until brown, about 1 hour. Stir in the Madeira and cook 2 minutes. Toss the sauce with drained, cooked pasta, preferably tomato pasta spaghetti, or macaroni. Serve at once with grated Parmesan cheese.

min 1 kg oyster blade steak or chuck or gravy etc outside fat off
plain flour to dust the meat
2 table sp oil
brown 1 min either side then put in pot
60 g butter
3 large onion sliced chunky
1 table sp flour
2 and 1/2 cups chicken stock
1 tea sp vegemite
1 table sp wistershire sauce
1 table sp tomato paste
salt and pepper
cook covered at 170 degrees c for 2 hours thicken with 1/4 cup water 1 heaped table sp instant gravy powder mixed together pour over steak when boiling to thicken.

Dark soy sauce (we've never tried this brand before so you gotta trial and error until you find a good premium dark soy sauce. The one we use has a really nice consistency - it's not too thick but not too watery. It's also not too salty and has a slight tinge of sweetness. The main purpose of dark soy sauce is to give your dish a dark colour with a really nice caramel taste)

Granny's recipes are the best! My granny is a Hokkien so I think this Quick Braised Fish with Ginger & Oyster Sauce is a typical Southeastern Chinese recipe. I remember my granny cooking this dish regularly when I was young. She either served this with rice or porridge. Super yummy. If you like your dish to have more sauce, simply double up the sauce ingredients. I'll leave the indication below so you can see what to double up. Saucy dishes are perfect for us because we love our rice to be drenched in sauce. I'm salivating at the thought of it. Try it and let us know what you think.
