100 g soft goat cheese
80 g walnuts
2 sprigs of thyme
2 tsp olive oil

For the dressing:
4 tbsp Extra virgin olive oil
2 tbsp white balsamic vinegar
1 tsp garlic powder
Zest of 1 orange
2 tbsp fresh orange juice
1 tsp Dijon mustard

You will learn how to make this wonderful Georgian recipe of Beet Salad with Mayonnaise (Charkhlis Salati).
This simple vegetarian salad of beets with a touch of mayonnaise and a shower of cilantro is truly enjoyable and refreshing. In Georgia, it would be served at informal small gatherings of close family and friends rather than at a grand meal. Serve with toasted bread or warm corn cakes for lunch or dinner.
Ingredients for Beet Salad with Mayonnaise (Charkhlis Salati)
Serves 4
3 beets (about 1.8 pounds/800g), scrubbed
2 or 3 medium garlic cloves, peeled and minced
¾ cup/30g chopped cilantro
½ teaspoon ground blue fenugreek
½ teaspoon ground coriander seed
2-3 tablespoon mayonnaise, or more to taste
Fine sea salt and hot red ground pepper or cayenne

This tasty and easy salad out of two main ingredients needs just a little of time for cooking. It can be served as a salad or a side dish to meat or fish. As known, beet salads are healthy and rich and cream cheese adds a special taste to this salad.

• beet – 20 oz | 600 g
• feta cheese – 3 oz | 100 g
• parsley leaves – 2 tbsp | 10 g
• lemon juice – 4 tbsp
• olive oil – 4 tbsp
• garlic – 2 cloves
• ground black pepper – ½ tsp
• sugar – 1 tsp
• salt – ½ tsp

• carving board
• deep bowl
???? Preparation:
1. Boil the beet until readiness and cut into small dices.
2. Cut the feta cheese into small dices.
3. In a deep bowl combine well the lemon juice, olive oil, minced garlic, black pepper and salt.
4. Add the diced beet into the bowl and combine.
5. Lay out the feta dices on top and sprinkle with the chopped up parsley.
6. Serve your beet and feta salad to the table
