How To make Beef Stew with Apple Dumplings
Ingredients

beef, stew meat, cut in 1 1/2 inch cubes
1/2
cup
flour
3
each
beef bouillon, cubes, crushed
1/2
teaspoon
pepper
2
cup
onions, sliced
2
each
garlic, cloves, minced
1/2
cup
beef broth
3/4
cup
apple juice
2
tablespoon
vinegar
1
teaspoon
thyme
1
teaspoon
curry
DUMPLINGS:
1
cup
applesauce
2
each
eggs, well beaten
2
teaspoon
parsley, fresh, chopped
2
cup
flour
2
teaspoon
baking powder
1
teaspoon
salt
Directions:
Coat meat with mixture of flour, salt and pepper. Combine meat, onion, garlic, beef broth, apple juice, vinegar, thyme and curry in removable liner. Place liner in base. Cover and cook on auto 7 hours; or high 4 to 5 hours; or low 8 to 10 hours.
Remove cover and place tablespoons of dumpling batter on top of stew. Cover and cook on high for 20 minutes.
To make dumpling batter: blend applesauce with eggs and parsley; add flour, baking powder and salt and beat into egg mixture.

I cooked beef stew for years before I was introduced to oxtail. Oxtail gives the stew a very rich flavor. Oxtail is tender, but also expensive. This hearty and flavorful stew tastes great! I hope you enjoy it as much as I do.
Beef Stew with Oxtail

2 lb boneless beef stew meat
1 lb oxtail
16 oz water (for cooking beef)
4 large potatoes peeled and cut into bite-size pieces
1 large onion chopped fine
2 (15 oz) cans Veg-All, small cut, drained
20 oz tomato juice
black pepper and salt to taste
Place boneless beef, oxtail, and water in a pressure cooker, cover, and cook for 1 hour. Remove the top, add potatoes and onion. Replace the top and cook for another 20 minutes. Remove oxtail, discard bone and fat. Put tender meat back into the pot. Mix potatoes and onion with meat. Drain potatoes. Mix veg-all and season with salt and pepper. Serve with cornbread or crackers. This will keep for several days in the refrigerator. Just warm in the microwave.
Apple Dumplings Recipe
4 apples peeled and halved
1 can refrigerated crescent rolls
1 stick butter melted
1 c sugar
1 c orange juice
2 Tbsp cornstarch
Wrap each apple half in a Crescent Roll and place it in a baking disk. Mix the next 4 ingredients and pour over apples. Bake at 350 degrees until bubbly and brown (about 45 minutes). Bake uncovered for about 20 to 25 minutes. Cover with foil until done. They will get brown if you leave them uncovered for the full cooking time.
There are other ways you can make this recipe. Instead of orange juice, you can add 1 can of Mountain Dew and a little Cinnamon
Another simple recipe is without Crescent Rolls. Do not peel apples. Cut the core out. Place in a foil-lined pan. This saves a lot of clean-up. Pour each hold with sugar. Let them overflow with sugar. Put 1 tablespoon of butter on top of each apple. Cook in and over at 350 degrees for 45 minutes. Cover with for another 30 minutes. About every 15 minutes spoon glaze over each apply. The peeling is a great addition to this recipe.
