3 oz Turkey breast; roasted, - sliced 1 sl Toasted white bread 2 sl Tomato 2 sl Bacon; cooked and drained <
Sauce:
> 2 oz Butter 3 oz Flour 3/4 c Cream 1/4 c Milk 1/2 c Swiss cheese; grated Salt and white pepper - to taste Recipe by: Beaumont Inn Heat butter and add flour. Whisk and slowly cook for 5 minutes. Whisk in cream and milk and heat. Whisk in cheese until melted. Season. Simmer for 30 minutes. Sauce should be very thick. Quarter toast and place in an oven safe dish. Top with turkey and tomatoes. Cover well with sauce. Bake at 400 degrees for 10 minutes. Garnish with bacon. Note: This is a regional favorite that originated at Louisville's Brown Hotel earlier in this century. Many variations can be found, most commonly country ham is added and a cheddar sauce is substituted. This is our version which I feel is closer to the original recipe. Betty's Trip to the Brown Hotel with Rick--NO RECIPE--
Betty and Rick have dinner at the Brown Hotel in Louisville, Kentucky. We went in search of the authentic Hot Brown Sandwich. The sandwich was created in the 1920s by the chef at the Brown Hotel, where as many as 1,200 guests came each evening to dance in the grand ballroom. Afterwards, in the wee hours of the morning, the guests would grow tired of dancing and retire to the restaurant for a bite to eat. Bored with the traditional ham & eggs, Chef Fred Schmidt delighted his guests by creating The Hot Brown--an open-face turkey sandwich with bacon, tomatoes, and a delicate mornay sauce. The Hot Brown (a Louisville tradition with worldwide appeal) has been featured in Southern Living, the Los Angeles Times, the New York Times, Wall Street Journal, and on NBC's Today Show, as well as a regular entry in many of the finest cookbooks. I have already made a hot brown sandwich that you might order at a typical Kentucky restaurant in Betty's Kitchen. Tomorrow, I will be uploading the true Brown Hotel Hot Brown Sandwich!
