4 ea Fresh tomatoes 1 ea Ripe avocado 2 dr Lemon juice 1 pn Chili powder 1 sm Handful of alfalfa sprouts 2 tb Chopped celery or green bell -- pepper 1 ts Chopped parsley 1 pn Coriander Salt Cut tops off tomatoes & scoop out insides. Save insides for another dish. Mash avocado & mix with the rest of the ingredients. Stuff into the tomato shells. Particularly good as an appetizer to a Mexican meal.

This recipe is an old one, but changed a bit to have more protein and more energy! I present you with a delicious and fast to make recipe for avocado stuffed with vegetables and an egg! Tasty and rich in healthy fats and high protein!
Necessary ingredients: 1 pcs. avocado 150 gr. peppers 50 gr. onion 1 pcs egg (average 60 gr.) 60 gr. cherry tomatoes (2 pcs.)
Cut the avocado in half. Remove the nut and the inside shell. Spoon out the mesh part of the fruit. Put it in a bowl. Keep the avocado peel. We will use it later. Cut the peppers and the onion into small bits. Mix them with the avocado mesh part. Put salt if needed. Mix again. Add one egg and stir again. Fill in the avocado peels with the mixture. Cut the cherry tomatoes into thin slices and put them on the avocadoes. Bake for 20 minutes in pre-heated oven on 180 C / 356 F. After ready serve and enjoy!

This easy and no-cook appetizer has a total of only 15 calories. Besides being healthy and delicious, this recipe is a perfect side dish for your next party or family gathering. Your guests will love these colorful, pretty and bite-size stuffed baby tomatoes!

Guacamole Stuffed Tomatoes
Serves: 8-10
30 cherry tomatoes
2 tbls cilantro and a little extra for garnish
1 jalapeño, seeded
¼ purple onion aka red onion
2 limes, zest of 1 lime and juice of 2 limes
2 avocados
Salt and pepper
Rinse and cut off the top off of cherry tomatoes, then hollow the insides out by running a knife just inside of the perimeter, then set aside. Combine cilantro, jalapeño, onion, lime zest and juice into a food processor until fine. Then crosshatch the avocados and put into the processor until smooth.
Place the guacamole mixture into a Ziploc bag and cut a small hole in the corner of the bag to pipe out. (May also use a pastry bag as well.) Salt and pepper the insides of the tomatoes and follow by piping the mixture into the tomatoes and garnishing with cilantro leaves. Serve and Enjoy!
