This deliciously easy broccoli soup uses frozen broccoli and avocado and comes together in no time. Plus, the creamy avocado makes it taste like an indulgent bisque and it’s dairy free too! Let us know in the comments below what your favorite soup is!
Broccoli Avocado Soup Recipe:
Ingredients:
1 tablespoon olive oil
1 medium onion, roughly chopped
2 cloves garlic, peeled and smashed
4 cups vegetable broth
1 package (16 oz.) frozen PRIVATE SELECTION™ Handpicked Broccoli Florets
1/2 package (16 oz.) frozen PRIVATE SELECTION Diced Haas Avocados
Salt
Pepper
1/2 cup roughly chopped salted pistachios
Kale chips, crumbled
Directions:
Step 1: Heat oil in large saucepan over medium-high heat.
Step 2: Add onion and garlic; cook 5 minutes, or until onion is softened.
Step 3: Add broth and broccoli. Increase heat to high; bring to a boil.
Step 4: Reduce to low, cover and simmer 5 minutes.
Step 5: Add avocados, and simmer 1 minute.
Step 6: Using an immersion blender, purée to desired consistency. Or, carefully transfer mixture to a stand blender and purée in batches.
Step 7: Season with salt and pepper. Divide between 4 bowls. Garnish with pistachios and kale chips. Serve immediately, refrigerating any leftovers.
