Hi there! This is one of the most served soups at Vietnamese gatherings and a must-have item on the wedding menu. Here's my twist of this soup by adding fresh asparagus, quail eggs and crispy chili oil. Enjoy!

Crab Louis

Ingredients
Sauce Louis:
1/2 cup mayonnaise
2 tablespoons chili sauce
2 tablespoons sour cream
2 tablespoons lemon juice
2 teaspoons Worcestershire sauce
4 scallions, minced
Kosher salt
Crab and Plating
2 cups (about 1 pound) cleaned, cooked lump or jumbo lump crab meat, chilled
Kosher salt and freshly ground black pepper
1 small bunch chives, minced
1 head Bibb lettuce, leaves separated
1 cup cherry tomatoes, preferably Sweet 100, or grape tomatoes, halved lengthwise
2 hard-boiled eggs, peeled and quartered
1 large lemon, sliced, for squeezing
Directions
Make the sauce: In a medium bowl, whisk together the mayonnaise, chili sauce, sour cream, lemon juice, Worcestershire sauce, half the scallions and a pinch of salt. Taste for seasoning.
For the crab: Spread the crab out on a rimmed baking sheet and sprinkle with salt and pepper. Sprinkle with the remaining scallions and half the chives. Drizzle with the sauce to taste. Do not mix.
To plate: Arrange the lettuce leaves as cups in a circle on a large plate. Disperse the tomatoes around the lettuce. Spoon some of the crab into each lettuce cup. Top each cup with an egg quarter and season with salt and pepper. Sprinkle with the remaining chives and a squeeze of lemon. Hold in the refrigerator until ready to serve and enjoy cold.

Asparagus and Crab Salad ( With Cool Parmesan Cheese Bowl! )
Asparagus and Crab Salad in a Parmesan Cup
Ingredients:
2 Bunches Asparagus Chopped
1 Avocado
Red and Yellow Grape tomatoes
1 # Lump Crab Meat
Watercress
2 Oz. Olive Oil
Juice of 1 Lemon
1 Oz. Rice Wine Vinegar
1 Tbsp Dijon Mustard
6. Oz. Shredded Parmesan
Procedure:
1. Heat the oven to 375 degrees. Line a baking sheet with a silicon mat or parchment paper sprayed with cooking spray. Arrange mounds of Parmesan equally apart from each other. Spread the cheese out so it equals a diameter of 5-6 inches. Make sure that the cheese is even. Bake for 10-12 minutes till golden brown. Allow the Parmesan to cool for a few minutes.Using a spatula, lift the cheese and place on small ramekins to form a cup. Allow this to sit and set aside.
2. Blanch the asparagus for 2 minutes and place in ice water to stop the cooking process.
3. Whisk together the oil, mustard, lemon, and mustard.
4. Combine the asparagus, tomatoes(sliced), avocado, crab, and dressing. Mix thoroughly.
5. Serve the salad in a Parmesan cup over watercress. Make sure the salad is chilled. Enjoy Guys!

For espuma:
Butter … 140 gr
Fish broth … 40 ml
Lemon juice … 10 ml
White wine vinegar … 10 ml
Soy sauce … 10 ml
Sesame oil … 5 ml
Egg yolks … 2 pcs
Xanthan … a pinch
Filling:
Crab meat … 150 gr
Asparagus … 50 gr
Butter … 10 gr
Salt, white pepper … to taste
Lace chips:
Protein … 20 gr
Flour … 16 gr
Salt … a pinch
Olive oil … 16 gr
Recipe:
1. Mix the ingredients for espuma and put it in a water bath for 12 minutes. Cool slightly, charge the cream into a siphon with 1 balloon.
2. Fry the asparagus in butter for 3 minutes. Heating 6. Crab meat is divided into fibers.
