Asian-Inspired Asparagus Salad - Delicious and Easy!
Looking for an easy, delicious, fresh-tasting, and something with an Asian twist? Try this recipe for Asian-Inspired Asparagus Salad. Check out the recipe below:
Asian-Inspired Asparagus Salad 1 lb fresh asparagus, cleaned and cut into 1 ½” pieces (see video for details) 2 tablespoons soy sauce ½ tablespoon canola oil 1 tablespoon rice vinegar 1 ¾ teaspoons granulated sugar ¼ teaspoon ground ginger (sub 2 teaspoons fresh ginger if you prefer) 1 teaspoon toasted sesame oil (found in Asian section of markets)
Instructions: Add cut asparagus to a pan of boiling water. Reduce heat and simmer gently for approximately 2 ½ minutes. Remove from heat and run under cold water to stop cooking process. Drain well and place in bowl. In the meantime, put together the salad dressing by adding all other ingredients in a small jar or salad dressing shaker. Shake well until well combined. Pour over asparagus. Eat now if you like or refrigerate for at least an hour. This is super delicious!
