How To make Apple Juice Roast
4 lb Boneless Beef Chuck Roast
2 ea Med. Onions, Sliced
2 T Butter or Shortening
1 c Apple Juice
1 T Catsup
1 t Salt
1/4 t Pepper
1/4 t Thyme Leaves
1/4 t Prepared Mustard
1/8 t Basil Leaves
3 ea Large Sweet Potatoes *
1 x Lemon Juice
GARNISHES:
1 x Chopped Parsley OR
1 x Apple Rings And Parsley
1 x Gravy
* Sweet potatoes should be pared and cut into pieces. ~------------------------------------------------------------------------- Cook onions in 1 T butter or shortening in Dutch oven until tender-crisp; set aside. Brown roast in remaining butter or shortening in Dutch oven over medium heat 15 to 20 minutes or until browned on both sides. Pierce entire surface of meat with fork. Combine apple juice, catsup, salt, pepper, thyme, mustard and basil; add to meat. Top meat with reserved cooked onions; cover and cook slowly 2 1/2 hours or until almost tender. Brush sweet potatoes with lemon juice for bright color; add to meat. Continue cooking, covered, 30 to 40 minutes or until meat and potatoes are tender. Place meat and potatoes on warm platter. Sprinkle potatoes with chopped parsley or garinish with apple rings and parsley, if desired. Serve gravy over sliced meat. NOTE: After apple juice mixture is added to browned meat, it may be marinated in the refrigerator until 3 to 4 hours before serving time; turn meat several times. If Dutch oven is cast iron, transfer to a glass dish. GRAVY: Skim excess fat from cooking liquid; add water if needed to make 1 1/2 cups. Mix 1/2 cup water and 2 T Unbleached Flour; stir gradually into cooking liquid. Heat to boiling; cook, stirring 3 to 5 minutes. Season with salt and pepper, if desired. Gravy may be served in Large Apple that has been scooped out, if desired.

Pork Pot Roast with Cider & Apples from Real Life Recipes
This one-pot pork roast made with cider and apples is a real celebration of the West Country. Mustard adds a subtle warmth and honey lends a little sweetness. It’s a stress-free way of cooking that’s like a casserole, but with the meat in one piece.

Recipe
Ingredients (Serves 4-6):
1.8kg rolled pork shoulder joint, skin scored
2 tbsp olive oil
3 onions, finely sliced
4 garlic cloves, finely sliced
3 tbsp plain flour
400ml cider
400ml chicken stock
A small bunch of thyme (tied with string)
12 sage leaves 2 bay leaves
4 Granny Smiths (or other crisp, tart eating apples)
1 tbsp wholegrain mustard 1 tsp honey
Salt and freshly ground black pepper
Method:
1. Preheat the oven to 190°C/Fan 170°C/Gas 5. Season the pork on all sides with salt and pepper, rubbing a little extra salt into the scored lines of the skin.
2. Heat the olive oil in a large non-stick casserole pan over a medium heat. Add the pork to the pan, skin side down, and colour well on all sides – the skin should be nicely crispy and browned. Lift the pork out onto a plate and set aside.
3. Add the onions to the pan and sauté for 2 minutes, then toss in the garlic and cook for another 2 minutes. Stir in the flour and cook, stirring, for another couple of minutes. Add half of the cider and chicken stock along with the herbs and stir well.
4. Bring the liquor to a gentle simmer and then return the pork to the pan. Put the lid on and place on the middle shelf of the oven to cook for 2 hours.
5. Just before the 2 hours’ cooking is up, peel, quarter and core the apples. Take the pan from the oven and remove the lid. Add the apples and mustard then stir in the remaining cider and stock. Return the uncovered pan to the oven and cook for another 30 minutes.
6. Remove the pan from the oven and transfer the pork to a warmed serving platter. Leave to rest for 10 minutes before carving. Stir the honey through the sauce then taste for seasoning and adjust as necessary.
7. Carve the meat into slices and break the crackling into pieces. Serve with some apple and cider sauce and sautéed tenderstem broccoli or other green veg.

If you plan to surprise your guests and family with something especially delicious, this recipe is for you. Unusual pork roast with potato and veggies cooked in an apple sauce will make your dinner a real culinary rejoicing.

✅ Ingredients:
• pork shoulder – 2½ lb /1500 g
• bulb onion – 9 oz /250 g
• carrot – 17 oz /500 g
• small potato – 21 oz /600 g
• apple juice – 2 cup /500 ml
• rosemary – 2 sprigs
• vegetable oil – 2 tbsp
• salt – 2 tsp
• ground black pepper – 2 tsp
• garlic powder – 1 tsp
• onion powder – 1 tsp
• sweet paprika – 1 tsp
✅ You will need:
• cauldron or heavy stockpot with a lid
• oven
• carving board
• cooking twine
• bowl
???? Preparation:
1. In a small bowl combine the salt, ground black pepper, garlic and onion powders and sweet paprika.
2. Bind together the meat with a culinary twine, brush with the vegetable oil, rub with the spice mixture on all sides and place into a cauldron or heavy stockpot.
3. Roast the pork with no lid in the preheated oven at 350°F /180°C for 30 minutes.
4. Take the stockpot out of the oven, lay out evenly the large-cut bulb onion, carrot and potato around the meat, sprinkle with salt and pepper to taste, add the rosemary sprigs, pour with the apple juice, cover with the lid and roast in the oven at 320°F /160°C for 1 h 30 min.
5. Remove the lid and keep roasting for 30 minutes more until golden crust.
6. Serve your pork roast with vegetables hot right out of the oven.
