How To make Andouille and Potatoes
3 tb Bacon drippings
1 c Chopped onion
1/2 c Chopped bell pepper
1 c Finely chopped parsley
1 c Dry white wine
1 tb Finely chopped garlic
1 tb Soy sauce
2 lb Audouille - or other heavily
-smoked sausage -Louisiana hot sauce or -ground cayenne pepper to -taste 1 ts Salt (or to taste)
6 md Potatoes, thinly sliced
Heat the bacon drippings in a large, heavy saucepan over medium high heat, and saute the onions, bell pepper, and parsley, stirring occasionally until the onions are clear. Add the wine, garlic, soy sauce, and andouille, and mix well. Add the salt and hot sauce and stir. Add the potatoes, stir, cover, reduce the heat to low, and simmer, stirring occasionally until the potatoes are tender, about 30 minutes.

Southern Style Smothered Potatoes & Sausage | I Heart Recipes
Hi friends! Today I’m sharing my recipe for Smothered Potatoes and Sausage. Follow along as I show you how easy this is!
Smothered potatoes and sausage is delicious any time of the day. It’s rich, hearty and comforting. This recipe is versatile and budget-friendly, too.
Start by frying up the sausage, and remove it once it’s nice and browned. Add the sliced potatoes to the pan and cook until tender. Add in green peppers, onions, seasoning and a little chicken broth. Once the peppers and onions are tender, add the sausage back in and cook until everything is nice and hot. That is it, y’all! We are good to go. I like to serve this with baked chicken, pork or catfish. And, of course, cornbread!

0:15 - Peel the potatoes.
0:24 - Slice the potatoes.
0:34 - Place the potatoes in water and set aside.
0:37 - Slice the onions.
0:50 - Chop the bell pepper.
1:02 - Chop the sausage.
1:15 - Cook the sausage in oil until browned.
1:37 - Remove the sausage from the pan.
1:46 - Add the potatoes to the pan.
1:51 - Stir and cook.
1:56 - Add the onions and pepper.
2:00 - Stir and cook.
2:08 - Sprinkle in the seasoning.
2:17 - Stir.
2:29 - Pour in chicken broth.
2:34 - Stir well.
2:39 - Add the sausage.
2:50 - Stir and heat through.
2:55 - Sprinkle in parsley flakes.

*The potatoes will take the longest - should be nicely browned and fork tender.
Ingredients & measurements:
You will need a Cast Iron (for the best flavor) OR I’ve made this in my Dutch Oven - works just as good! ????
2 packages of Smoked Sausage Links (any favorite brand - I use, Kielbasas)
1 large yellow Onion or two medium (sliced thick)
About 6/7 large Rustic Potatoes (cleaned & diced) (you can peel the skin or use with skin - your preference)
2+ TBSP of Butter (I use salted)
Olive Oil
Salt & Pepper to taste (I use fresh ground black pepper and pink Himalayan salt, you can use Kosher)
1 TBSP Garlic Powder (or more per taste)
1 TBSP Oregano
1 TBSP Parsley
1/2 TSP Crushed Red Pepper Flakes (or more per taste)
2 TBSP Paprika (You can use smoked, I use regular)
