How To make Almond Butter Cookies(Sandwiched with Jam)
3 cups ground almonds
1 cup sugar
1/2 pound unsalted butter (2 sticks)
2 cups unbleached allpurpose flour
1 teaspoon salt
1 tablespoon water
Preheat oven to 375 degrees. Combine ground almonds and sugar. Blend in butter. Add dry ingredients. Add water and blend well. Shape into a flattened ball. Wrap in parchment and chill at least 1/2 hour. Roll out onto lightly floured board until approximately 1/4-inch thick. Cut into desired shapes, and place on parchment covered baking sheet about 2 inches apart. Bake until golden brown. Cool. Sandwich with strained or seedless jam (raspberry is great!) or chocolate ganache.

Recipe: Spitzbuben - German sandwich cookies filled with jam
Spitzbuben are a traditional German cookie recipe.
Spitzbuben:
1 cup (200g) butter
3/4 cup (150g) sugar
2 eggs
a dash of salt
1 tsp vanilla extract or 1 tbsp vanilla sugar
1 cup (100g) ground almonds (optional)
2 1/2 cups (300g) flour
About 3/4 cup (200g) jam whichever flavor you prefer
Cream butter. Add sugar and cream together. Add eggs and beat until fluffy. Add rest of the ingredients slowly and beat between each addition. Dough will be rather thick. If you prefer, you can chill this dough for an hour before trying to roll it out. Roll out on baking paper or floured surface. Cut out two of the same cutter for each cookie, one of which should have a smaller cut out from the middle of the cookie. Make them in pairs until all the dough has been used. Bake at 300°F or 160°C for about 10 minutes or until the cookies no longer look shiny. Allow to cool. Add a half a teaspoon of jam to the cookie with no cut out from the middle and press the second one on top.

Almond Butter and Jam Cookies
Disclaimer: your children will love this recipe. Any recipe that instructs them to jam their thumbs into cookie dough and fill it with jam is an A+ in their books. It's a cookie that will win your heart, too. Raspberries and almonds are a winning combination and this recipe in particular highlights the flavors beautifully—lightly sweet, with a buttery almond flavor and pop of sweet raspberry goodness. If you and your children are fans of PB&J, you'll love this cookie.
Ingredients
1 cup raw almonds
1 cup rolled oats
1 cup whole-wheat pastry flour
1 teaspoon cinnamon
pinch salt
½ cup canola oil
½ cup maple syrup
8 tablespoons raspberry jam
Instructions
Preheat oven to 350°F.
Place almonds in a food processor and grind into a fine powder. Make sure not to over blend, or it will turn into almond butter.
Transfer to a mixing bowl. Then use the food processor to grind the oats into a coarse flour. Combine the oat flour with the cinnamon, salt, almond, and whole wheat flour.
Whip the oil and maple syrup together, then add to the almond-oat flour and mix well. Form into walnut sized balls and place on an oiled cookie sheet. Use your thumb to press down on the center of each ball to make 1⁄2-inch indents.
Add ¼ teaspoon of raspberry jam to each indent. Place the cookie sheet in the oven and bake for 10-15 minutes.
Ready in about 30 minutes
Makes 3 dozen cookies
