Aigo boulido, meaning boiled water in the Provencal language, is a very simply soup, a sop, to be precise, and part of the big Christmas Eve dinner in Provence. It consists of salted water in which aromatic herbs like sage or thyme have been boiled which is then poured over pieces of stale bread that are rubbed with fresh garlic and drizzled with olive oil. Grated cheese can be added, if you like. Simple and good, a classic poor man's food that goes back centuries.
