This is Bubby's sour cream pancake recipe, or as close as I can get it. Bubby's is a restaurant in NYC that makes THE BEST pancakes in the world. They base their recipe off of a James Beard recipe. Today's episode is how to make the best pancake recipe, inspired by Bubby's recipe. Pancakes are one of the great breakfast recipes for kids but they will please any crowd. This is my take on James Beard's sour cream pancake recipe.

Ingredients:
- 2 1/2 cups flour - 2 tbsp. sugar - ½ tsp. salt - ¼ cup virgin coconut oil, at room temperature - 1 3/4 sticks cold unsalted butter, cut into cubes - About ½ cup ice water - Sanding sugar for sprinkling on crust (not used in this video but will be in part 2)
Directions:
1. Whisk flour, sugar, and salt together in a medium bowl. Crumble coconut oil over dough, scatter butter cubes evenly on top, and rub both into the flour mixture with your fingers-like you're making the universal sign for money, as a friend of mine likes to say. Stop when the mixture looks like cornmeal with lots of pea-size lumps. Drizzle in 6 tbsp. of ice water and stir with a fork until the mixture starts to come together in a dough; add more ice water, 1 tbsp. at a time, until it does.
2. Turn dough out on a work surface, gather into a cluster, and knead twice-just to get the dough to come together (you don't want to develop gluten in the flour). Divide into two disks, wrap them in plastic wrap, and chill at least 30 minutes (and up to 2 days).
