How To make Whole Wheat& Oak Bran Bread
-JUDI M. PHELPS (BNVX05A) 2 Eggs
1/2 c Oil
1 c Buttermilk
1/2 c Brown sugar
1/2 c Molasses
1 1/3 c Whole wheat flour
1 c Flour
3/4 c Oat bran flakes
2 ts Baking powder
1 t Baking soda
2 ts Cinnamon
1 c Dates
chopped
1 c Walnuts :
chopped
Beat together first 5 ingredients until blended. Mix together the remaining ingredients and add all at once. Beat until blended. Do not overbeat. Divide batter between 5 greased mini-loaf pans (6x3x2-inches) and bake in a 350 degree oven for about 45 minutes, or until a cake tester, inserted in
center, comes out clean. Allow to cool in pan for 10 minutes, and then remove from pans and continue cooling on a rack. Yields: 5 mini-loaves. Note: Oat bran can be purchased in most supermarkets or health food stores. It comes as "milled" or "stone-ground". The milled is finer in texture and the stone-ground will produce a slightly coarser crumb, which adds a little character to this country-style loaf. Multigrain Bread High in fiber and Nutritious Bread. This Healthy Bread multigrain is easy to make at home.
Ingredients :
225 g all-purpose flour
150 g whole wheat flour
1 tbsp of olive oil
2 tsp of honey
1 packet + ½ tsp of dry yeast
5 g of salt
450-500 g of lukewarm water
50 g of buckwheat
20 g of oat
10 g of oat bran
10 g of wheat bran
10 g wheat germ
40 g of flaxseeds
30 g sesame
30 g of pumpkin seeds
10 g of millet
Instructions:
1/ Pour yeast in lukewarm water, add 1 tsp of honey, and cover with a wrapped plastic
2/ Take 1 tbsp of sesame, 1 tbsp of flaxseed and, millet toast them lightly then ground them.
3/ In a large bowl combine all ingredients except the oil, add slowly the water and knead for 10 minutes. Add the oil mix well. As you can see the dough is sticky because it’s hydrated so don’t worry about that.
4/ Cover the dough and let it rise for 2hours or until the volume double
5/ Transfer the dough to cake mold or in a pan without gas cover it and let it rise again for 1 hour
6/ Preheat the oven to 180°C (370°F)
7/ Bake the bread for 30 to 40 minutes.
N.B: you slice the bread cover each slice with wrapped plastic film, freeze it. and it is ready to toast

Ingredients to make Oats and whole wheat/ Atta Bread :-
Whole Wheat Flour - 1.3Cup / 300 Gms
Oats - 3/4 Cup / 80 Gms
Water as required
Instant Yeast - 1½ Tsp
Sugar - 1 Tsp
Milk Powder - 2 Tbsp
Salt to taste
Oil - 2-3 Tsp
Milk - 1.5 tsp (For Brushing)
Sesame Seeds, quick Oats for Sprinkling - 1.5 Tsp Each
Method to make Oats and Whole Wheat / Atta Bread:-
1. Grind quick oats to make oats flour
2. In 1/2 Cup lukewarm water add yeast & sugar. Mix and let it set for 10 mins.
3.In a large mixing bowl, add the whole wheat flour, oats flour , milk powder, salt and mix well.
4. Add the yeast mix to the flour mix and give it a good stir. Once clumped, transfer onto a flat surface. Grease some oil on your hand and on the surface to prevent the dough from sticking. Knead the dough for 15 minutes.
5. Once kneaded properly Transfer the dough to a greased bowl. cover with a damp cloth and let it rise for 45 minutes.
6. Once doubled in volume, knead again for a minute or two. Roll it around to make a round even ball. Now slowly roll it with your hands to make a oblong log. Now sprinkle the quick oats and sesame seeds on the surface and roll the dough on it.
7. Transfer the dough in a greased bread tin / mould and press down. Sprinkle some water on top.and cover with a damp cloth and keep aside for 45 minutes.
8. After the dough has doubled, brush the bread loaf gently with milk.
9. Now bake in a preheated oven for 35-40 minutes at 170-175c.
10. Take the bread out. Let it sit for 5 minutes, then loosen the edges with a knife and take the bread out.
Once its completely cool, slice with bread knife or store in a bag.
