How To make Sweet Mango Chutney
225 g Mangoes
100 g Sugar
2 Cloves garlic
3 sl Ginger
2 ts Mustard seeds
2 Cloves
2 Cardamoms
75 ml Vinegar
1/2 ts Chilli powder
1/4 ts Salt
50 g Sultanas
Peel and slice the mangoes and place in a bowl for 3 hours with half the sugar. Crush the garlic, ginger and mustard seeds together and crush the cardamoms and cloves. Mix all these ingredients together and add the vinegar, chilli powder and salt. Put in a pan, add the remaining sugar and cook for 10- 15 minutes. Add mango slices, mix well and cook for a further 10 minutes, mix well and stir in the sultanas. From "A taste of Sri Lanka"

Mango Chutney
Ingredients:
5 Mangoes (pealed and small diced)
2 Cups Sugar
1 Cup White Distilled Vinegar (5% acidity)
1 Tbsp Ginger (minced)
2 Garlic Cloves (minced)
1-2 Tbsp Vegetable Oil
2 Red Chili’s
1 Tsp Mustard Seeds
1/2 Tsp Turmeric
1/2 Tsp Coriander
1/2 Tsp Cumin
1/2 Tsp Cinnamon
1/4 Tsp Clove
Salt
*In a large pot on medium/low heat, add oil, garlic, ginger, and chilis. Sauté until fragrant.
*Add ground spices and cook until fragrant.
*Next add mangoes, sugar, vinegar, and salt to taste.
*Simmer for 1.5 hours until reduced and thickened.
NOTE: If the mango chunks are too big, you can use a potato masher and make them smaller.
*Store in a jar and refrigerate. Serve with any protein as a glaze, bread, cheese, or spread on toast etc…

With mangoes in season, now's the right time to make it. I would say, make a large quantity of the the sweet and spicy Goan mango chutney so you'll have no regrets once mangoes are no longer available in the market. Besides, it needs the minimum of ingredients.
This chutney, as it is called, is not a spreadable paste, but has a delicious bite to it, being made with finely cut pieces of partly ripe mangoes. The Goan mango chutney is an all-time favourite for people from Goa. It could be a huge hit with your family as well. So do check it out.
