Ingredients:
Serves 6 - 8 pax
3 slices of young ginger
4 cloves of chopped garlic
10 pcs of small - medium size Chinese mushrooms (rehydrated)
1/2 tablespoon of sesame oil
1/2 teaspoon of sugar
2 tablespoons of abalone sauce or oyster sauce
15g of dried scallops (soaked in 1 cup of hot water & shredded)
1/2 cup of water used to soak the Chinese mushrooms
2 bay leaves
A few dashes of white pepper
3 cloves of chopped garlic
250g of Chinese spinach
1/2 teaspoon of salt
Some cornstarch solution
1 tablespoon of Chinese cooking wine (Shaoxing Huatiao wine)

Ingredients:

80 g dried bean curd sticks
200 g shiitake mushrooms
200 g potatoes
1 tbsp of oil
2 tbsp sliced green onion
1 tbsp sliced garlic
1 tbsp light soy sauce
1 tbsp dark soy sauce
1 tsp sugar
1 tsp salt
starch water (1 tbsp starch + 100 ml water)

Chinese Stuffed Mushrooms 百花酿香菇
This Chinese Stuffed Mushrooms is really a simple dish and yet it looks so presentable. Especially when you are planning to host a gathering or Potluck. Impress your friends and family members with this mushrooms!
Main Ingredients:-
3 pcs Baby Pok Choy - Cut half
6 pcs Dried Shiitaki Mushrooms - Soak in water for 30 minutes
120g Minced Pork
50g Fish paste (salted)
5cm Length Diced Carrot
1 tbsp Chopped Spring Onions
1 tbsp Corn Flour
6 Wolf berries (optional)
Seasoning
White Pepper
1 tbsp Soy Sauce
4-5 drops Fish Sauce
Few drops of Sesame Seed Oil
Sauce
100ml Mushroom water
1 tbsp Oyster sauce
1/2 tsp Sugar
1 tsp Maggie Concentrated Chicken Stock
Few drops Sesame Seed oil
1/2 tbsp Olive Oil
1 Clove Chopped Garlic
Few pieces of Sliced Carrot
2 tbsp Cornstarch slurry
Method:
1) Boil a pot of water, add in olive oil & salt. Blanch baby Pok Choy for 1 minute. Drain and arrange on plate.
2) Mushrooms remove stems. Mushrooms squeeze out extra moisture. Keep the mushrooms water.
3) Combine minced pork with fish paste, white pepper, soy sauce, fish sauce, sesame seed oil, carrot and spring onions
4) Split Pork mixture into 6 portions
5) Dust some corn flour on each mushrooms.
6) Roll pork mixture into balls and stuff in each mushrooms
7) Add wolf berries on top (optional)
8) Steam over medium high heat for 12minutes.
9) Prepare sauce: Combine mushroom water, oyster sauce, sugar, chicken stock & Sesame seed oil
10) In a wok, preheat olive oil, add in garlic and carrot. Stir fry for 1 minute
11) Add in sauce. Once boil, add in cornstarch slurry. Cook untill sauce thickened.
12) Pour sauce onto mushrooms.
13) Done!

CHINESE MUSHROOMS STUFFED WITH PRAWNS AND PORK
This filling is infused with ingredients such as ginger, garlic, soy sauce and other condiments to give it lots of flavor. Your friends family will be really impressed because this is a traditional Chinese village recipe.
12 to 15 whole Chinese mushrooms
8 to 10 prawns
6 oz. ground pork
2 tbsp. chopped garlic
2 tbsp. chopped ginger
3 tbsp. chopped green onions
1 tsp. salt
1/2 tsp. chicken soup base
1/2 tsp. brown sugar or other sugar
1 tsp. sesame oil
1 tsp. light soy sauce
1 egg
1/2 small carrot
Soak Chinese mushrooms in water for 1 hour or longer. Some Chinese mushrooms require longer soaking. Cut out stem from each mushroom.
For the filling:
In a bowl, put in the prawns and pork. Add all the rest of the ingredients, except the carrot. Use a fork or chopsticks to mix all the ingredients.
Put 1 to 2 tablespoons of the filling in each mushroom. Put all the mushrooms spread out in a wide bowl. Chop the carrot into small pieces. Top each mushroom with 2 or 3 pieces of the carrot for color.
Bring some water in a pan to a boil. Put bowl with stuffed mushrooms in the pan. Cover with a lid and steamed for 20 to 30 minutes, depending on the size of the mushrooms. These stuffed Chinese mushrooms are delicious with oyster flavored sauce. Enjoy!
