INGREDIENTS
►2 large garlic cloves
►1 small white onion coarsely chopped
►28 ounce can fire roasted crushed tomatoes or 2, 14.5-ounce cans
►4 ounce can fire roasted diced green chiles
►1 cup fresh cilantro leaves loosely packed, plus more for garnish if desired
►2 tablespoons fresh lime juice about 1 lime
►½ teaspoon ground cumin
►1 teaspoon smoked paprika
►½ teaspoon dried oregano ideally Mexican oregano
►1 teaspoon fine sea salt plus more to taste

Tomato Chilli & Lime Salsa
4 x Tomatoes (Seeds Removed)
1 x Small Red onion
1 x Clove of Garlic
1 x Lime (Zest and Juice)
20ml x Olive Oil
5g x Sugar
1/4 tsp x Chilli Flakes
1 heaped tsp x Coriander (Chopped)
Pinch of Salt
1. Cut the tomatoes into quarters and remove the seeds. Finely dice the flesh of the tomato and place it into a bowl along with 1 finely diced red onion and one finely diced clove of garlic.
2. Next add in the chilli flakes, olive oil, sugar, zest and juice of one lime, chopped coriander, and a pinch of salt to taste.
3. Give everything a good mix and enjoy!

1. Grapefruit Salsa
2 large grapefruits
3 tablespoons finely diced red onion
2 tablespoons chopped mint
A pinch of chill flakes (optional)
a pinch of salt
1 tsp vinegar (I used tarragon vinegar)
1 tsp extra virgin olive oil
2. Roasty Toasty Corn Salsa
1.5 cups frozen corn
1 onion
3 cloves garlic
1 jalapeno
1/4 tsp smoked paprika
1/4 tsp tajin (optional)
Zest and juice of 1 lime
Pinch of salt
Cilantro (optional)
• Steam the corn until it’s no longer frozen, and allow it to cool.
• Roast the onion, garlic, and jalapeño for 15 minutes at 450 F, then roughly chop.
• Chuck everything into a bowl, add the rest of the ingredients & toss well

You can add it to your tacos, enjoy it as a dip with nachos or bread, or top any meal with this salsa like with a sauce. The recipe only features tomatoes, garlic, onion, and herbs. You'll be surprised how the flavours blend together if you roast the tomatoes first. Best thing - you can even do it without an oven, with or without an open fire. We will show you how to roast tomatoes on a gas stove, and make a salsa using only gas stove. You won't even need a blender.
