How To make Piquant Salmon Rolls
Ingredients

cream cheese
1/4
cup
walnuts, chopped
1
tablespoon
chives, fresh, chopped
1
each
celery, stalk, chopped
3
teaspoon
lemon, juice
3
each
cayenne pepper, pinches
1/4
teaspoon
coriander, ground
8
each
salmon, smoked, thin slices
8
each
bread, whole-wheat, thin slices
1
butter
8
each
cucumber, thin slices
1
pepper, freshly ground
1
dill, sprigs, fresh, (optional)
1
chives, fresh, (optional)
Directions:
In a bowl, soften cream cheese and stir in walnuts, chives and celery. Add 2 teaspoons of lemon juice and spices and mix well. Spread cream cheese mixture on each slice of salmon and season with pepper. Roll up to form neat rolls.
Toast slices of bread and cut 8 (2.5 inch) rounds, using a biscuit cutter. Spread thinly with butter. Place a cucumber slice on each bread round and place a salmon roll on top of each cucumber. Drizzle with remaining lemon juice and garnish with dill sprigs and chives, if desired.
NOTE: Salmon rolls can be prepared several hours in advance and refrigerated. Toast bases, however, are better freshly made. Once assembled, serve within 30 minutes.

Use tofu or mushroom instead of salmon to make this recipe plant-based????
Ingredients:
For the salmon
½ lb. salmon, skin and bones removed
1 Tbsp. tamari @sanjtamari
1 garlic clove, crushed
½ lime, juiced
½ Tbsp. coconut sugar @madhavafoods
½ tsp. sriracha
½ tsp. sesame oil
Extra virgin olive oil, for frying
For the pickle
1 watermelon radish, cut into quarter rounds
2 jalapeno pepper, seeded and sliced
⅓ cup apple cider vinegar
1½ Tbsp. maple syrup
Pinch sea salt
For the sauce
1 Tbsp. tamari
½ lime, juiced
½ Tbsp. maple syrup
1 tsp. sriracha
½ tsp. sesame oil
For assembly
Rice paper @star_anise_foods
½ avocado, sliced
Extra virgin olive oil, for frying
Cilantro
Black sesame seeds
Instructions:
1. In a container, whisk together tamari, garlic, lime juice, coconut sugar, sriracha, and oil. Stir in salmon and marinate in the fridge for 30 min.
2. In a clean jar, add the ingredients of the pickle. Seal the jar and shake well. Let it sit in the fridge for 30 min.
3. Whisk together the ingredients of the sauce. Set aside.
4. Heat olive oil in a pan over medium heat. Remove salmon from the marinade and drip off the excess. Reserve the marinade. Sear both sides. Add the marinade to the pan and coat the salmon. Cook salmon on both sides until cooked through.
5. Quickly dip the rice paper in a dowl of water and place it on a work surface. Rice paper softens while preparing the filling. On the center, Layer jalapeno, avocado, radish, cilantro, and salmon and wrap up.
6. Heat olive oil in a pan over medium heat and fry salmon bites on both sides until golden brown. Transfer onto a plate and sprinkle sesame seeds. Serve warm with the sauce.
