Double-decker Peanut Butter Delight | Emeril Lagasse
Emeril recreates a young viewer’s recipe for a Double-decker Peanut Butter Delight. Chockful of peanut butter, bananas, honey, chocolate chips, and brown sugar, this warm and gooey sandwich is extraordinary.
DOUBLE-DECKER PEANUT BUTTER DELIGHT
MAKES ONE SANDWICH
3 slices bread (white or cinnamon swirl)
1/4 cup creamy peanut butter
1/2 banana, sliced into 4 slices
1/2 tablespoon honey
1 tablespoon mini semisweet chocolate morsels
1/2 tablespoon light-brown sugar
1 tablespoon unsalted butter, softened
Cold glass of milk, for serving
Preheat oven or toaster oven to broil or highest setting.
Toast 1 slice of bread in a toaster until golden brown. Spread half of the peanut butter on 1 of the untoasted slices of bread and top with banana slices. Drizzle evenly with honey. Place the toasted slice of bread on top. Spread with remaining half of the peanut butter. Sprinkle peanut butter evenly with chocolate morsels, and then sprinkle with brown sugar. Top with the remaining untoasted slice of bread. Transfer the sandwich to a baking sheet. Place under the broiler (or in the toaster oven) and toast until golden brown. Using a spatula, carefully flip the sandwich over and toast the other side until golden brown. Remove sandwich from oven, and working quickly, spread butter evenly over top of sandwich. Cut sandwich in half, and serve immediately with a cold glass of milk.

Peanut Butter Delight Tutorial
Peanut Butter Delights - A Classic No Bake Cookie!
This classic no-bake treat is fast and easy to make, and only requires a few ingredients. I remember having these in the grade school cafeteria - and they taste as good now as they did back then!
1 cup sugar
1/2 cup milk
4 TBSP butter
1/4 tsp vanilla
2 TBSP cocoa powder
1/2 cup peanut butter
2 cups quick cooking oats
Prepare a couple of cookie sheets with parchment paper, or waxed paper.
In a large pot, combine sugar, milk, butter, vanilla and cocoa. Over medium heat combine and stir until mixture comes to a boil. Allow it to boil gently for 1 minute.
Add peanut butter and stir in until peanut butter is melted and combined. Add oats and remove from heat. Stir to make sure all oats are complete coated in chocolate mixture. Set pan aside for about five minutes so that it cools slightly.
Using a tablespoon, drop mixture on to parchment lined cookie sheets. Cookies will harden as they cool. Put cookie sheets in the refrigerator for 35-45 minutes, or in the freezer for 15 minutes. You can also let them just cool to room temperature. They should be kept in a sealed container in the refrigerator, but they won't last long! Enjoy!

This is the CLASSIC No Bake Cookie recipe with oats, chocolate and peanut butter. It's no fail and perfect when you don't want to bake - they taste like a chewy peanut butter cup!

INGREDIENTS
1/2 cup unsalted butter diced
2 cups granulated sugar
1/2 cup nonfat milk
1/4 cup unsweetened cocoa powder
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
1/4 teaspoon salt
3 cups quick cooking oats
INSTRUCTIONS
Line two cookie sheets with parchment paper.
It’s very important that all your ingredients are measured and ready to go before you start and make sure you’ve read the directions before making these cookies. The process goes fast!
Melt the butter in a 3 quart saucepan over medium heat. Stir in the sugar, milk, and cocoa powder. Whisk until smooth then bring to a boil and cook for about 1 ½ minutes, stirring occasionally. NOTE: you MUST boil them long enough or they will not set. To be sure of this, boil the mixture until it reaches 230°F on a candy or instant read thermometer. If you do not have a thermometer, this will take about 1 ½ minutes on medium heat.
Remove from heat and stir in peanut butter, salt, vanilla, and oats.
Use a cookie scoop to drop 2 tablespoon size balls of cookie mixture onto the prepared baking sheets. Let sit to set or chill to harden quicker.
