How To make Palm Beach Brownies
8 oz Unsweetened chocolate
2 Sticks Unsalted butter
2 c Walnuts, be generous
5 lg Eggs
2 ts Pure vanilla extract
1/2 ts Almond extract
1/4 ts Salt
1 tb Plus 1 teaspoon powdered
-instant Expresso 3 3/4 c Sugar
1 2/3 c Unbleached flour -- sifted
Adjust an oven rack one-third up from the bottom and preheat oven to 425 degrees. Line a 9x11x2-inch pan with foil. Brush well with melted butter. Melt the chocolate and butter in the top of a large double boiler over hot water on moderate heat or in a small, heavy saucepan on low heat, stirring occasionally. When combined, remove from heat and set aside. Break the walnuts into pieces if necessary, trying to keep them fairly large. In the large bowl of an electric mixer, beat the eggs with the vanilla and almond extracts, salt, expresso and sugar at high speed for 10 minutes. On low speed, add the chocolate mixture
and beat only until mixed. Remove the bowl from the mixer and stir in the nuts. Pour the batter into the prepared pan. Bake for 35 minutes, reversing the pan from front to back once to insure even baking. At the end of 35 minutes, the cake will have a firm crust, but when tested with a toothpick will appear underbaked. Do not be concerned, it is done. Remove the pan from the oven and let stand until cool. Invert the brownies onto a cookie sheet and remove the foil. Cover with length of waxed paper and another cookie sheet, invert again. This cake MUST be covered and refrigerated for a few hours or overnight before it is cut into bars. Makes 32 JUMBO brownies. Recipe By : Maida Heatter (3-22-96)

Gluten-free, high protein brownies
We are starting Monday with yummy, chocolate brownies while at home with 4-H. These tasty brownies are gluten-free, high in protein, and make a great snack. The video text recipe is correct but you'll notice Mrs. Carmen doubled the recipe that she made since we all wanted some! Try these at home and tell us what you think!

Ingredients
1 cup of walnuts
1 cup of dates
Approx 75g of berry and cherry mix
5 tablespoons of raw cacao powder
4 tablespoons of shredded or desiccated coconut
2 tablespoons of raw extra virgin coconut oil
2 tablespoons of raw honey (to make vegan use agave nectar, maple syrup or a sweetener of your choice)
Pinch of sea salt
Equipment
Food processor with copping blade

Here's an awesome recipe I made with my Swolemate for Valentine's day that is vegan friendly and packed with protein. You can enjoy this anytime of the year too, of course! :)

Pre-heat oven to 350 degrees
Ingredients:
1 Banana
1 Cup Cashew Milk (or Almond Milk)
3/4 Cup Brown Rice Flour
1/2 Cup Cacao Powder
1 Scoop Protein Powder (Vegan Friendly)
1/2 Cup Tapioca Flour
1/2 Cup Coconut Oil
1/4 Cup Maple Syrup
1/2 Tsp Sea Salt
1/4 Tsp Ground Clove
1 Tsp Baking Powder
2 Tbls Ground Flaxseed in 7 Tbls water
1/2 Cup Coconut Sugar
1/2 Cup Semi Sweet (Dairy Free) Chocolate Chips
Mix all ingredients together and bake for 30 mins.
I served the brownies with a side of dairy-free ice cream/coconut whipped cream and raspberries, but feel free to put your spin on it and let me know what topping combo you did in the comments :)
