Veg Railway Cutlet Recipe | स्वादिष्ट रेलवे कटलेट | Chef Sanjyot Keer
Full written recipe for Railway Cutlet
Prep time: 15-20 minutes
Cooking time: 20 minutes
Serves: 18 pieces.
Ingredients:
Cutlet mixture
OIL | तेल 2 TBSP
CUMIN SEEDS | जीरा 1/2 TSP
GINGER | अदरक 1 TSP (CHOPPED)
GREEN CHILLI | हरी मिर्च 2-3 NOS. (CHOPPED)
ASAFOETIDA | हींग A PINCH
CARROT | गाजर 1 NO. (CHOPPED)
BEETROOT | चुकुंदर 1 MEDIUM SIZED (CHOPPED)
FRENCH BEANS | फंसी 1/3 CUP
GREEN PEAS | हरा मटर 1/3 CUP
POWDERED SPICES
TURMERIC POWDER | हल्दी पाउडर 1/4 TSP
CORIANDER POWDER | धनिया पाउडर 2 TSP
SPICY RED CHILLI POWDER | तीखी लाल मिर्च 1 TSP
GARAM MASALA | गरम मसाला 1/4 TSP
BLACK PEPPER POWDER | काली मिर्च पाउडर A PINCH
SALT | नमक A PINCH
POTATO | आलू 4-5 MEDIUM SIZED (BOILED)
CORN FLOUR | कॉर्न फ्लोर 1 TBSP
BREADCRUMBS | ब्रेड क्रंब्स 3 TBSP
SALT | नमक TO TASTE
DRY MANGO POWDER | आमचूर पाउडर 2 TSP (OR LEMON JUICE)
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
Crumbing
REFINED FLOUR | मैदा 4 TBSP
CORN FLOUR | कॉर्न फ्लोर 2 TBSP
SALT | नमक A PINCH
WATER | पानी AS REQUIRED
BREADCRUMBS | ब्रेड क्रंब्स AS REQUIRED
SALT | नमक A PINCH
Method:
Set a pan over high heat & once it gets hot add in the oil, cumin seeds, ginger, green chilli & asafoetida, stir & cook briefly over high flame.
Further add carrot, beetroot, french beans & green peas, stir well & cook over high flame for 2-3 minutes.
Then add all the powdered spices, salt, mix well & continue to cook over high flame for 1-2 minutes.
Once cooked, transfer the veggies into a large mixing bowl & let them cool down completely.
While the veggies are cooling down, take a large plate or tray & mash the potatoes in them using a potato masher.
Once the veggies have cooled down, add corn flour, breadcrumbs, mashed potatoes, salt, dry mango powder & fresh coriander, mix all the ingredients well using your hands, you don’t have to mash or knead the mixture.
If you feel like there is not enough binding then you can add more breadcrumbs as required, to check if the mixture is ready take a small portion of the mixture & press it, if it binds & holds its shape perfectly then your mixture is ready to be shaped.
To shape the railway cutlets, take a medium sized portion of the mixture & form it into a roundel, once you have the roundel form it into a droplet shape using your palms & then press it in a single stroke to form the cutlet, shape all the cutlets similarly.
Make the slurry for crumbing by adding refined flour, corn flour, salt & water as required while whisking continuously to form a semi-thin slurry.
Add breadcrumbs as required in a tray or a plate & season them with salt.
Add the shaped cutlet into the slurry & coat it well with the slurry, then take it out from the bowl using a fork & let the excess slurry drip off.
Place the cutlet in the breadcrumbs & cover it well with the breadcrumbs, make sure that an even layer of the breadcrumbs is applied, coat all the cutlets similarly.
To fry the cutlets heat oil until it gets moderately hot (165 C), then drop the cutlets in the oil carefully & fry over medium high flame until golden brown & crispy.
Once fried transfer them into a sieve so that all the excess oil drips off.
Your railway cutlets are ready, serve them hot with bread slices, butter & ketchup.

1 cup Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
½ tsp Sugar, चीनी
1 ½ tsp Black pepper powder, काली मिर्च पाउडर
½ tsp Cardamom powder, इलायची पाउडर
1 tbsp Degi red chilli,powder, देगी लाल मिर्च पाउडर
½ tbsp Coriander powder, धनिया पाउडर
A pinch of asafoetida, हींग
A pinch of cumin powder, जीरा पाउडर
1 tsp Ginger garlic paste, अदरक लहसुन का पेस्ट
1 cup Water, पानी
⅔ cups Semolina, रवा
Oil for shallow fry, तेल तलने के लिए

½ cup Refined flour, मैदा
Water as required, पानी
Salt to taste, नमक स्वादअनुसार

⅓ cup Pizza cheese blend, चीज
1 ½ cup White bread crumb , ब्रेड क्रम्ब , (for coating)

Heat oil in a kadai, add cumin seeds and let it splutter well.
Add ginger and saute it well, add carrot, french beans, green chilli and saute for 2-4 minutes.
Add prepared tandoori curd mixture and mix it well.
Cook until the semolina absorbs all the water.
Transfer the mixture into the large bowl. Let it come to room temperature.
Add coriander leaves and mix everything well.

In a bowl, add curd, salt to taste, sugar, black pepper powder, cardamom powder, degi red chilli powder.
Add coriander powder, a pinch of asafoetida, and a pinch of cumin powder.
Add ginger garlic paste, water and mix it well.
Add semolina and mix everything well.
Keep aside for further use.

Divide the mixture into equal portions, make a dent in the centre and stuff it with cheese.
Close it from all sides and dip into the slurry and coat it with breadcrumbs.
Heat oil in a kadai. Once the oil is hot, slide the cutlet into the hot oil.
Once the cutlet is slightly golden, turn over the other side. Fry the cutlet on medium flame so that it's cooked from inside.
Remove it on a kitchen tissue.
Garnish with coriander sprig and serve hot.

Crunchy Vegetable Cutlets
Recipe in English:
Ingredients:
-Pani (Water) as required
-Matar (Peas) ½ Cup
-Gajar (Carrot) julienne ½ Cup
-Bund gobhi (Cabbage) ½ Cup
-Chukandar (Beet root) julienne ½ Cup
-Aloo (Potatoes) boiled ½ kg
-Shimla mirch (Capsicum) chopped 2 tbs
-Hara pyaz (Green onion) chopped 1/4 Cup
-Hari mirch (Green chili) chopped 2 tbs
-Lehsan paste (Garlic paste) ½ tbs
-Podina (Mint leaves) chopped 2-3 tbs
-Hara dhania (Fresh coriander) chopped 2-3 tbs
-Knorr chicken powder 1 sachet
-Garam masala powder 1 tsp
-Lal mirch (Red chili) crushed 1 tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Namak (Salt) ½ tsp or to taste
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Samosa/Manda patti as required
-Maida (All-purpose flour) ½ Cup
-Pani (Water) 1/4 Cup or as required
-Cooking oil for frying
Directions:
-In pot,add water,place strainer and heat it.
-Add peas,carrots and boil for 3-4 minutes.
-Add cabbage and boil for 1 minute,strain and let it cool down (pat dry completely).
-Add beet root and boil for 1 minute,strain and let it cool down (pat dry completely).
-In bowl,add potatoes and mash well with the help of the masher.
-Add boiled vegetables,capsicum,green onion,green chili,garlic paste,mint leaves,fresh coriander,chicken powder,garam masala powder,red chili crushed,cumin powder,salt,red chili powder,coriander powder and mix well.
-Add boiled beet root and give it a good mix & set aside.
-In chopper,add samosa/manda patti and chop well & take out in a bowl.
-In bowl,add all-purpose flour,water and mix well.
-Grease hands with oil,taka a mixture and make cutlets of equal sizes then dip into all-purpose flour paste and coat in crumbled samosa/manda patti (makes 16-18).
-In frying pan,add cooking oil and fry cutlets until golden brown.
-In air fryer machine,place vegetable cutlets,grease with cooking oil and air fry at 200 C for 20 minutes.

-Matar aur gajar dal ker 3-4 minutes kliya boil ker lein.
-Bund gobhi dal ker 1 minute kliya boil ker lein phir strain ker ka thanda ker lein (pat dry completely).
-Chukandar dal ker 1 minute kliya boil ker lein phir strain ker ka thanda ker lein (pat dry completely).
-Bowl mein aloo dal ker ache tarhan masher ki madad sa mash ker lein.
-Boiled vegetables,shimla mirch,hara pyaz,hari mirch,lehsan paste,podina,hara dhania,chicken powder, garam masala powder,lal mirch crushed,zeera powder,namak,lal mirch powder aur dhania powder dal ker ache tarhan mix ker lein.
-Boiled chukandar dal ker mix ker lein & side per rakh dein.
-Chopper mein samosa/manda patti dal dein aur ache tarhan chop ker lein & bowl mein nikal lein.
-Bowl mein maida aur pani dal ker ache tarhan mix ker lein.
-Haathon ko oil sa grease karein aur mixture ko la ker ek jaisay sizes ka cutlets tayyar ker lein phir maida ka paste mein dip karein aur crumbled samosa/manda patti mein coat ker lein (makes 16-18).
-Frying pan mein cooking oil dal dein aur cutlets ko golden brown hunay tak fry ker lein.
-Air fryer machine mein vegetable cutlets rakh dein aur 200 C per 20 minutes kliya air fry ker lein.
