How To make Lemon Sage Tortellini w/ Chicken & Peppers
1 lb frozen cheese-filled tortellini
1/2 tbsp butter
1 tbsp olive oil
1 lb boneless skinless chicken breast halves
1 roasted red bell pepper
cut into thin strips
salt and coarsely ground black pepper :
to taste
4 thin slices smoked chicken or turkey -- cut in thin strips
1/2 tsp dried sage
1 1/2 tsp grated lemon rind
2 tbsp lemon juice
2 tbsp chopped parsley
Cook tortellini in boiling water according to instructions on package.
Meanwhile melt butter and olive oil in large frying pan over medium high heat. Add chicken breast, salt and pepper, and stir fry for about 3 minutes. Add red pepper strips, turn heat down to medium, and cook until
chicken and pepper is done, stirring periodically.
Add smoked turkey or chicken strips and fresh sage*, and stir fry until heated through. Add tortellini, lemon rind, lemon juice, and parsley. Ad d more salt and pepper if needed. Stir for a minute or two to heat and mix =2E Serves about 6.
*If you use dried sage, add it earlier in the process, with the chicken.
The original recipe said to roast and peel the red pepper, which I think is too much work. You can buy canned roasted peppers which work wonderfully. If you use them, add them later, with the smoked turkey, since they're already cooked. I like them, but I also like plain red bel l pepper.

Lemon Pepper Chicken
Today I’m sharing my easy lemon pepper chicken recipe! This was the first chicken recipe I tried to make when I started cooking. It was so delicious that I would cook it at least thrice a week! This juicy and tasty chicken recipe does not need fancy ingredients and is beginner friendly. Once you try it, you'll cook it almost every day. So simple to make that everyone can make it. *RECIPE* (2 servings)
INGREDIENTS
1 lb/450g chicken thighs/chicken breasts
3 tbsp olive oil
3 garlic cloves
Optional: fresh parsley and lemon zest
— marinade —
1/2 tsp salt
1 tsp crushed black pepper
1 tsp oregano/mixed herbs
1/2 tsp cumin powder
Juice 1/2 lemon
METHOD:
1. Cut 1 lb/450g chicken thighs or chicken breasts into bite sized pieces about 1 inch thick
2. Add the marinade ingredients to the chicken, mix well and set aside for 30 minutes to 1 hour
3. On medium flame, heat 3 tbsp olive oil and infuse 3 crushed garlic cloves
4. Add the chicken without overcrowding the pan. This way they will brown well
5. Sear on all sides until browned and cooked through. Chicken thighs will be ready in 5-6 mins and chicken breasts in 3-4 mins
6. Optional: Garnish with some fresh parsley and lemon zest

SUBSTITUTES:
• No lemons?
1 tbsp lime juice can be substituted. Avoid lime zest however
• No cumin powder?
Skip it
• No oregano or mixed herbs?
Dried thyme, rosemary, tarragon, sage, mint and dill work well too
• No fresh parsley?
Fresh cilantro/coriander works well too

TIPS:
• The chicken can be chopped and tossed into salad, sandwiches, wraps and pasta
• Don’t overcook the chicken or it will get too tough
• The salt and lemon quantity might change depending on taste. The amounts mentioned will be suitable for most but adjust at the end if needed

2 large chicken breasts
5-6 cloves garlic (minced)
2 cloves garlic (crushed)
1 medium onion
1/2 cup chicken stock or water
1 tsp lime juice
1/2 cup heavy cream (sub fresh cream)
Olive oil
Butter
1 tsp dried oregano
1 tsp dried parsley
Salt and pepper (as needed)
*1 chicken stock cube (if using water)

FAQ:
• Why lime juice?
As wine is not used in this recipe, lime juice is added for acidity (sourness). Otherwise the sauce might seem too rich
• When to add salt to the sauce?
Add salt towards the end as stock/stock cubes have added salt. I did not find the need to add more salt
• What else can be added to the dish?
Mushrooms, broccoli, bacon, spinach and parmesan cheese can also be added for additional flavor
• What to pair with the dish?
Pasta, steamed veggies, mashed potatoes, rice, couscous or crusty bread.

TIPS:
• Chicken stock can be substituted with white wine as well. Omit lime juice if using white wine
• The entire sauce needs to be cooked on low flame so as to prevent it from splitting
• Reduce the liquid before adding cream
• Add 1/4 cup parmesan cheese to add more flavor
