How To make Lemon Cooler Cookies
1 cup unsalted butter; room temp.
1/2 cup sugar
1 1/2 tablespoons grated lemon peel
1 egg yolk
1 teaspoon lemon extract
1/4 teaspoon salt
2 1/2 cups flour
sugar powdered sugar
Preheat oven to 375 degrees. Using electric mixer, cream butter in medium bowl until light. Gradually add 1/2 cup sugar and beat until fluffy, stopping occasi onally to scrape down sides of bowl. Beat in lemon peel, yolk, extract and salt . Add flour and beat just until blended (if dough is very stiff, beat with a wo oden spoon). Roll dough by tablespoonfuls into balls. Set dough balls on ungrea sed heavy baking sheets, spacing 3 inches apart. Dip bottom of 2-1/2"-round gla ss into sugar. Press down onto 1 dough ball, flattening into 1/4" thick round. Repeat with remaining dough balls. Bake until cookie edges begin to brown, abou t 10 inutes. Transfer cookies to racks and cool. Sift powdered sugar over tops. (Can be prepared 3 days ahead. Store at room temperature in airtight container . )

I have tons of cakes mixes of all types so I thought it would be fun to come up with a cake mix cookie recipe. Let me tell you, these cake mix cookies are about as easy as it gets. I also have a Strawberries n' Cream Cake Mix cookie recipe that I used to create this recipe. They are so good so I thought that a lemon and lime version would be just as good and I was so happy with how they turned out.
If you are like so many people and not a very experienced baker, these cookies are a great place to start. They are so easy and to make and it would be very hard to mess them up. They are also a great dessert if you are in need of one super fast. If you forgot that you offered to make a dessert and you need one right away, these take less than an hour from start to finish. Also, if you don't have a lemon or a lime cake mix, don't fret. You can make these with a regular cake mix. Just do everything the same. You could use food coloring if you wanted to, to make them yellow and green or you could leave that part out. It's totally up to you.
I just love how refreshing and light these cookies are. If you haven't made cake mix cookies before, you are missing out! They are light and fluffy and absolutely delicious. If you are new to my blog, you might not know that I love cake mixes. I think that they are a great tool to use in your kitchen to make all sorts of fun desserts. They make it a lot easier and it's amazing all the fun things you can make with a yellow cake mix. Soft Lemon Cookies - Melt in your mouth
Lemon cookies are super simple to make and delicious. Made with a combination of lemon juice and zest, they have a tremendous natural flavor. I really enjoy them with a nice cup of tea or glass of milk.

There are a few tips to making these tasty lemon cookies. First, I find the juice from one lemon is about perfect. If you want them more or less lemony, simple adjust the amount of juice accordingly.
I always use a few drops of yellow food coloring to make them really yellow and vibrant. This is totally optional, and you can be the judge.
The zest from one lemon is about perfect form my liking. Just be careful not to zest too far into the lemon as it will become bitter. You only want the zest from the shiny part of the skin.
The amount of sugar and vanilla extract can be altered too. Just be careful not to over power the lemon flavour with vanilla extract.

Lemon Cooler Cookies
Ingredients
• 2 sticks unsalted butter, softened
• 1 cup powdered sugar
• 2 tablespoons lemon juice
• 2 cups all-purpose flour
• ¼ teaspoon salt
• 3 cups powdered sugar
• 2 teaspoon finely grated lemon zest (use more for a stronger flavor)
Directions
Preheat oven to 325°F; line a large baking sheet with parchment paper.
Using an electric mixer on high speed, beat butter and 1 cup of sugar until light and fluffy; about 3 minutes. Beat in lemon juice and zest. Gradually add flour and salt. Batter will be stiff. Cover and chill for at least 1 hour.
Use 1-inch cookie scoop to form small cookies; roll with hands into small balls. Place about 1 inch apart on prepared baking sheets. Bake until set on top and lightly browned around edges, 20 to 25 minutes.
Add 3 cups of powdered sugar to a large bowl. Remove cookies from oven and let cool slightly. Roll warm cookies in sugar to coat. Let cool slightly and then roll cookies in the sugar again. Let cool on wire racks.
